How to Cook Tender Eye of Round Roast Beef. Including delicious Gravy Recipe.

  • Tender and Delicious Roast Beef. Round eye roast is an inexpensive option, but how to cook it so it's delicious and tender? This can be a special occasion dinner, or Sunday night family meal.

    Ingredients
    . 2 kg eye of round cut
    . 2 TS of each salt and black pepper
    . 1 TS butter
    . 1 TS oil
    Roast at 400 F in preheated oven for 15 minutes, then reduce the temperature to 325 F and continue roasting for one hour.
    For the Gravy
    . 1/4 cup butter
    . 1/4 flour
    . 2 1/2 to 3 cups beef stock
    . salt and pepper to taste

    Really excellent I tried it today. Gravy was a surprise, I usually make it from scratch from the pan drippings, but this method looks great too. Thanks

      Thank you, sometimes I use just the drippings from the pan if i"m making a smaller amount, or add the drippings to the beef stock to enhance the flavour.

    Looks great. The only thing I would change is seasoning. I like to have each of my entrees flavour different from the sides. To have the entire dish taste the same IMHO takes away from the entree.

    I must have miss it, how long was the roast in the oven and at what temperature, was it done?

      Don’t say the temperature but was cooked for 1 hour

      400-450/5-7 minutes per pound. Increase decrease cooking time for personal preference.

    Plating needs some help. Just too heavy and crowded. And two veggies with potatoes is plenty. Everything is seasoned with salt and pepper. Makes everything taste similar. Mix it up a little and try different spices. Other than that, the cook on the type of meat selected is an excellent one.

    What temperature ? This video is useless without it.

      400-450 at 7 minutes per pound. For me this is overcooked. You can cut it to 5 minutes per pound for a slightly pinkish center. Roast beef shouldn't be fully brown inside to me. Tastes dry and the meat isn't tender.

      Overcooked for me. She likes hers well done. I'd go with 400 degrees at 5 minutes per poundb for a nice medium cooked roast. Well-done roast beef is dried out and tough.
