Yes - there's an ITE for critical care fellowship, too! For fellowship itself, I spent most of my time on learning the clinical care aspect and diving into the primary literature of landmark studies to ensure that I'm up-to-date on the literature for my practice. I didn't really use a textbook. I also would say that this is your opportunity to really utilize your attendings as resources to ask decision-making questions so that you can develop your own style.
