They did try to arrest him, but he attacked them first, he never attempted to talk himself out the situation.
That's one area where the novelization was much better at explaining things. Palpatine actually selectively records the encounter in a way that implies the Jedi are either persecuting him for religious beliefs or are actually there to try and kill him from the start, leaving out any incitement on his part to make himself look like the villain.
I love when stories highlight that the Empire has all but risen at this point. Things would have been bad if Sidious was arrested or killed in the Chancellor's office because being a Sith isn't exactly a crime.

Actually, in the original timeline, being a Sith was a crime. Darth Bane: Path of Destruction states that the senate had declared the Sith an illegal organization after the Jedi Civil War in ~4000 BBY, and that law was still around in 1000 BBY, as that's when the novel takes place. We have no sources stating that law was removed between 1000 BBY and 19 BBY, so it can be assumed to still be on the books.

This scenario is incomplete. Arresting Palpatine before he could initiate order 66 means that Rex and his clones never crashed the ship, and Ahsoka made it back to Coruscant with Maul who could easily testify to Palpatine’s many crimes.

Couldn't palp just yell execute order 66 in the senate hall then use the confusion to escape as all hell breaks loose.
Palpatine had an emergency order of he was arrested for the recording to be played.

After Palpatine killed 3 Jedi Masters for coming to arrest him(not kill him), how was it going to be "Cold Blood" if Mace decided to follow through with Killing Sheev. Remember, while the Jedi DID ignite their Lightsabers, the Chancellor attacked 1st. Also, I do understand Palps was unarmed, but only after Mace Kicked him and Sidious dropped his saber as he fell to the floor. He did not give up willingly and attempted to fry Mace he said "You are Under Arrest, my lord." While it is not the Jedi way, killing Go For Papa Palpatine at that moment would not be in Cold Blood IMO considering what transpired in his office after the Jedi attempted to Arrest him.

So then during the Jedi Council meeting following the event's that took place in the office, Mace could've said the following to all Jedi present either physically or by hologram.
Mace ~ Anakin has gained my trust.
With the weight Mace carries in the Jedi Council just imagine how impactful that would've been and he would be keeping his word to Anakin which would've immensely helped Anakin with his trust issues toward the Jedi Council and by extention Mace himself.
This was an absolute amazing video dude. Was on edge right up to the trial! That heroic moment of Anakin's really showed his true personality.
If Windu kills Palpatine, no order 66, Padme doesn't die, No Death Star, No destruction of Aldrean, no trillions killed and etc!

Now granted there were many factors that contributed to Anakin turning to the Dark Side and becoming a Sith Lord, but I've always personally believed that one of BIGGEST reason was simply because Master Mace Windu NEVER trusted Anakin. Not only that, but going SOLELY by what we saw on-screen in the Prequel Trilogy my opinion has always been that it seemed like Mace Windu actually WANTED Anakin to fail as a Jedi.
And I've personally always thought that was COMPLETELY the wrong approach for Mace to take towards Anakin, because like Anakin Mace had a natural affinity for the Dark Side.
TRUE, Mace Windu had the training and practice and experience to harness the Dark Side WITHOUT letting it corrupt him and ALSO remain true to the Jedi Order, but I've always felt that Mace, in his ARROGANCE, didn't even CONSIDER the fact that with proper training Anakin could do the same thing.
So I like your 'what-if' scenario here, where Mace Windu actually LISTENED to Anakin, and instead of essentially MURDERING an unarmed and defeated Supreme Chancellor Palpatine (AKA Darth Sidious) actually adhered to the Jedi Code and Ideology and instead took Palpatine into custody.
But regardless of my opinion, again great video.

That was another terrifically great and sensationally spectacular alternate history take on starwars. As Sidious always forgets the little people or details once he has used and discarded them and was deliciously ironic to see his former sins in respect of the naboo crisis and before being his downfall.
Bruh Anakin legit pointed out that palpatine is a massive manipulator and then proceeds to try and manipulate Anakin more. 😂

I haven’t noticed that your stories often address lot line of Yoda, realizing that Jedi order need to allow. Attachments. However, I don’t think that would happen in this situation. Because not enough negative stuff to make Yoda realize things were wrong they still found the Sith Lord and the war ended.
Yoda when talking to Anakin realized he was in a relationship as him having to hide it made him vulnerable to palpys manipulations

The Star Wars galaxy make what if qui gon jinn was grandmaster after killing Darth Maul for killing Kenobi, and the rest well, you can do it maybe because he is grandmaster he trains Anakin along with Dooku he and qui gon free anakin’s mother earlier so that he can know she is safe and then years pass, and Anakin Skywalker has trained and it’s granted access to the restricted Jedi archives thanks to his master qui gon because he knows anakin skywalker is the chosen one. He needs to know more knowledge, and become much more stronger and powerful. Eventually he finds out Anakin is in love with Padme, so he allows anakin to be with her.

What if Windu and the other Jedi Masters carried their own secret recording devices when arresting the chancellor?
The great mistake of the jedi masters was trying to arrest Palpatine without any proof of guilt. If just they informed the senate of the death of General Grievous and wait for the response of Palpatine as a chancillor and return the powers gained during the war, they will be able to act on it.
So Palpatine was right when he talked with Anaking at the opera; "all who gain power are afraid to lose it, even the jedi".

Only complaint with the story is that restraints would not work if you cut his hands off because the natural taper of your forearms means handcuffs would fall off without hands

I love all of these stories but im unsure if I like the idea of Sidious just saying "F*ck it!" and attacking everyone at once, sure he was the sith and a very powerful one at that, aswell as patient, I could see him just allowing himself to be taken and just biding his time until either he became one with the force or something. other than that it was fun

Short answer: yes, the dark side completely screws with someone. I would highly recommend checking out the ROTS novel, it perfectly describes his turn.
There is one glaring flaw in your story. Anakin cut off Sidious' hands. How would handcuffs work?

So basically Mace was right all along. Sidious was always too dangerous to be left alive.
Here is what militaries and governments due in that situation, it's used normally for officers and nco"s who die in combat, Ahsoka would be "posthumously" awarded the rank of jedi knight, whether she accepts it and comes back woukd be mist lukely up to her, its done also with retirement sometimes so unless their actually changing the rules for making master's the rule remains whole
Ahsoka would receive an award with rank and two tiny lightsaber just big enough for paper weights, just kidding she would mist likely be given her lightsaber back or told to keep them if their still in her possession
Asoka captured maul that would have changed some things in my opinion as well instead of gunray maul fighting sidious one last time in Senate building would have been interesting

Honestly, I think Anakin should have died when the building collapsed. It would have been made a far better ending. Especially since it would have been his desire to protect the people he cared most about that gave him the power to do so. That could have been a great way to introduce the idea of how powerful attachments could make a jedi.
