I have been making wine since last 6 years. For spices, you'll always get cinnamon stronger than any other spice. Fennel seeds also work well with some fruits.
I made red wine in 8 days without sugar and much less yeast. Just graps only and no spices. Much much better than Sula or any other Indian wine. Taste like south African wine. My wine is dark in color because I don't add water in my black grapes juice.

Nahi ..achha banta hai ...just be careful to close lid and also stir every 2 days ...when the bottle is kept open .. alcohol reduces and it turns into vinegar ( sweet sharbat banta hai ) Best luck
Followed this recipe, and started my batch yesterday(9 Jan 2021). Will update this when done and let you know how it goes. The only difference is that i didnt add beetroot as i already had a deep red
Update on 4 Feb 2021: It tastes good! Its a good base recipe, and it was my first try. I will leave it for longer and see how the taste improves. Mine tastes more fruity than alcoholic at the moment, but it is still nice. Will update in a few months, i hear that 6 months is when the taste will have fully matured.

Hey can you reduce the sugar content to 500g or lesser then that…. 2nd how red wine is good you have 1.5kg sugar in 2kg grapes 🍇… so means you must be taking lots of sugar if you drink red wine.
mathematically... if you take a sample out of a lot, the concentration in it will be the same.. which means whole wine , 1 bottle all contains the same% of alcohol.. quantity of alcohol differs but% will be same

From my understanding by just fermenting fruits u don't make enough methanol for it to be toxic altho if u fuck up the air lock and if some bacteria like acetobacter gets into ur wine it's gonna turn the alchohol into acetic acid aka vinegar

Find a better way to crush the grapes. & Today nearly all big modern wineries use giant stainless steel fermentation tanks. So clearly that's not a problem with fermentation reacting with it.
Yes you can cover with muslin cloth becz during primary fermentation there is formation of co2 gas and alcohol by the activity of yeast by the available air inside the jar if you close the lid tightly it is difficult to growing yeast hence use muslin cloth while primary fermentation....then in secondary fermentation you need not to muslin cloth just tight with lid close and leave it for aging.... hope you got this
So i have used below ingredients to make my wine watching this video 24 hours ago: 1.5 kg grapes 1 kg Sugar Some spices 200 gram wheat 10 gram yeast mixed with water. Good recipe but what's with seperating crushed grapes only to crush the rest😅 over ripe fruits are best for wine making it adds body to it, the wine you prepared is called spiced sweet wine, use cork if possible and store at 45 degrees tilt with wine hitting the cork it will Aireate the wine enhancing flavour and let's it breath. Using earthen pot or bharni🙄 what people call the ceramic jar in mangalore helps in enhancing aroma.

Use black grapes skin as black grapes r easily available
Brown sugar or jaggery instead of white sugar gives dark red color.

Vinegar is made after adding bacteria (forgot the name).. it then changes this wine to vinegar

The longer the wine is fermented, the better it gets. I have tried that out in my papaya videos which is an example.
