I have a tip for your honey- add a few drops of oil to the measuring spoon, swirl around and then measure your honey. It comes out easy no mess or sticking.
FILLING 2 lbs tart cherries 1 cup sugar 1 tbsp almond extract 4-6 tbsp corn or arrowroot starch CRUMB TOPPING 3 cups flour 2 cups sugar 1 lb butter 3/4 cup old fashioned oatmeal 1 tbsp vanilla extract Step 1: Preheat oven to 350 degrees. Step 2: In a deep 13x9 baking dish, combine all cherry filling ingredients and mix well. Place the dish in the oven and bake for 15 minutes. Step 3: Cube butter into 1/2-inch pieces and place in the bottom of a food processor. Add the remaining crumb topping ingredients on top. Pulse until well blended and the butter is completely incorporated. Step 4: Take hot cherry filling out of the oven. Grab the crumb topping by the handful and evenly crumble it over the cherry filling. Press down lightly in some areas to create a mix of textures. Add enough topping to completely cover the filling. Step 5: Return the dish to the oven and bake for 30-45 minutes, until the filling is thick and bubbly, and the topping is golden brown. Step 6: Serve with vanilla ice cream, and enjoy!

I am wondering, you mentioned it was a tart cherry cobbler and you were using tart cherries, but the package said dark sweet cherries, not tart cherries?
This reminds me of a vintage Ina Garten show ….way back when Food Network was THE channel to watch. I’ll add it would help if the filet was tied up so that it cooks evenly- but regardless with all that butter no one would care. YUM!
