    Going to try to make this for son he loves Mexican flavors and he rarely eats meat

      I'm sure he'll enjoy! Definitely salt along the way and taste test. I felt that was the main thing lacking. I also put some pickled jalapenos and vegan sour cream on my serving as well 😏

      Me too! I'm trying to stop relying on it so much as well. I've found it's really easy to just completely remove it from most recipes, especially if you are just using it to saute.

    I would add something like Rotel or a salsa to spice it up a bit.... nice idea though, thanks for the video and suggestion!

      Salsa would be fantastic with this--I love salsa verde and think it would go particularly well with it.

      No, I've just been pulling from that site/book for this month since we're focusing on WFPB! I may revisit it in the future though 😊

    I'd add some flaked almonds in the cheese sauce. When I prepare some "fake parmesan", I just blend flaked almonds and nutritional yeast together and that's perfect. Maybe add more nutritional yeast next time for more "cheesy" flavour?
    Anyway, I'll definitely try this. Cheers from Belgium :D

      Yes! Almond "parmesan" with nooch is great. I have no idea why this didn't taste that cheesy--I figured an entire cup of nutritional yeast would be enough, but maybe not!

      Yeah, if you have a cheese sauce you prefer, definitely use that!

      It could definitely use a bit more seasoning, so try it out before you add to the casserole!
