Me too! I'm trying to stop relying on it so much as well. I've found it's really easy to just completely remove it from most recipes, especially if you are just using it to saute.
I'd add some flaked almonds in the cheese sauce. When I prepare some "fake parmesan", I just blend flaked almonds and nutritional yeast together and that's perfect. Maybe add more nutritional yeast next time for more "cheesy" flavour? Anyway, I'll definitely try this. Cheers from Belgium :D
Yes! Almond "parmesan" with nooch is great. I have no idea why this didn't taste that cheesy--I figured an entire cup of nutritional yeast would be enough, but maybe not!
