  • A unique pork loin recipe that I learned from a family in Italy. This pork tenderloin recipe is delicious and convenient. On a baking sheet you get meat with a delicious stuffing of mushrooms and eggs, as well as potatoes. Add a green salad and a delicious lunch or dinner is ready! Cook with love! Cook with joy!
    Ingredients and preparation:
    1.2 kg pork fillet
    1 tsp salt
    1 tsp smoked paprika
    1 tsp dried garlic
    1 tsp oregano
    Black pepper
    About 200 ml low-fat yoghurt or buttermilk
    1 tbsp vegetable oil
    1 medium onion
    1 carrot (50-70 g)
    150 g mushrooms
    About 200 g smoked bacon
    Non-stick baking paper
    Black pepper
    3 eggs
    30 g Parmesan
    5-6 potatoes
    1 tsp garlic powder
    1 tsp paprika powder
    Salt
    Black pepper
    Vegetable oil
    Bake at 180C for 25 minutes with top/bottom heat and convection, then another 25 minutes without convection
    Turn on the grill (level 2) or increase t to 230C
    To keep the meat juicy, the internal temperature at the thickest part of the meat should be 60-64C

    This is a great dish as we usually think that eggs and pork can be combined if the pork is breaded. Marinating the in yogurt, after it was coated in spices, for an hour will make the meat absorb the enzymes which can tenderize the meat and aid in digestion. It is also a great way to maintain the juiciness of the pork. Putting the mushroom and carrot mixture adds texture and flavor notes.
    When we were young, it was a treat for us to have two kinds of meat served during meals, especially lunch or dinner, as it would usually consist of dried fish or fish soup. Now that me and my siblings are working and earning - along with right financial management - we can splurge every once in a while with our meals, especially when we are together. This would be a great meal to enjoy together, though not technically made of two kinds of meats. However, I know that my father would joke that "We are eating two kinds of meat in a single dish. Some pork and three whole chickens (referring to the eggs). Just shows how far we made it." That is the great thing about him, finding ways to make the situation light.
