You season your meat like a trini:)) I’m a trini and I always use freshly blended green seasoning. This is the first pepper pot I know I will enjoy because of the green seasoning. I can cook ‘really well actually’ so based on ingredients added to a dish I can tell if it will taste good;). With this recipe I substituted the cube with ‘all purpose Maggie taste maker’. My Guyanese husband will definitely enjoy this. Thanks so much for your video!

Oil is your flavor honey this is not a dieters dish. It’s a full filling dish, it looks so delicious and yes I used Ox tails and short ribs. I didn’t put cow heals in there but it still looks delicious .😋
Hi Candy: Don’t think I am being rude , but where are you living do let me know. Your pepper pot was real, real exquisite. Showing it on your tripod close up was an excellent idea. You are the first Guyanese chef that has done this and shown your pepper pot in all its ways it was meant to be shown. If you are living in North America, I will teach you a little trick. To get the oil out get some paper towels, lean the pot on it’s side and let the paper towel soak up the oil or if you have a porch outside your kitchen door , when it cools down place a bungee cord from side to side over your pressure cooker and put the pot on your barbecue near the porch door. The next morning when you wake up bring it in and scape the fat off with a big acrylic-plastic spoon. Another think you mentioned I like my pepper just like how you love yours, but my sons and husband don’t so on the next day, I Pre heat it I leave it soft but not too soft, because as you know a large pot of pepper pot has to pre heat every day, and ever time you pre heat , it gets softer, so the next day after I take out the oils and fats I dish my two children own into a container as well their friends always want some and they can warm it how they like it and I can preheat mine to whatever softness I want. I usually have to cook a large pot because all my neighbours and son friends always send me a note saying it’s the best people pot they have ever eaten. I have a little trick that I put inside of mind and even my mother who taught me to make it looks forward to hers. Coo doos to your amazing pepper pot. I saw the Video with the macaroni and stew children, I have never, ever heard of it, it look delicious. I will get my hubby to try it . He is a magnificent chef. It nice to see and learn from others. It's the reason I venture off into international cuisine so I could have a variety of things to make and I don't have to keep repeating the same recipes also it keeps things interesting and not boring. I tried this recipe on Saturday and we had it with homemade plate bread (your recipe) on Sunday. I did tweak the recipe a bit after tasting it tho😬. I added bay leaves, 1 star aniseed, and a bunch of fresh oregano to get that extra Guyanese flavor my husband loves. It turned out great! If ever you try it you can post for us😁 Another good recipe I just had to tweak for my husband’s personal preference🥰🥰🥰. As usual keep up the good work!👍

My mom definitely told me onions would spoil pepperpot. So it's green seasoning, dried Guyanese herbs my granny has given my mom since idk how long and plenty garlic, wiri peppers and orange peel. I just can't stray from what works.

The oil is healthy as it allows A D E and K vitamins to be transport throughout you body. Which is essential for optimal health. All excessive fat intake from a natural source like from meat is perfectly fine because bile is released to take care of the fat. Oil from seeds and margarine is killing people. Just though I would share that.
Oooooh 😯wait so is hot pepper what you call that pepper? i always wondered why it just said hot pepper on the label so its a guyanese thing im Jamaican we use scotch bonnet mostly but also habenero so im assuming guyanese hot pepper is somewhat simular maybe idk ill definitely try it one day, the main Caribbean market i shop at is Guyanese owned the majority of the products are either from Jamaica Guyana and Trinidad and Tobago im in love with wiri wiri peppers ive got to say they are the fruitiest hot pepper ive ever had and i never imagined such a great thing existed until fairly recently
Hot peppers can be any pepper, scotch bonnet, wriwri, chili, Habenero etc. The ones i use are Habenero peppers because that's the hottest ones we get here in Virginia I just say hot peppers in the videos to let people know they are hot and not sweet.
I made this recipe after ditching a bunk recipe I had planned to make it was absolutely amazing. But I did have a question. The flavor was great just after it finished but the next day, it was so intense I actually had to add a little water. I know, white guy here but I’m not allergic to seasoning. Is the flavor supposed to be super super intense or did I over season?

The casreep it is very difficult to make at home. That is why the natives make it in the interior. They have to removed the Cyanide from the cassava. Do your research and you will see Candy can’t perform miracles.
I don't understand. I use regular warm water to make roti. If you mean measurements I cannot say how much exactly because flour absorbs different depending on the brand so you would have to pour alittle at a time until your dough is formed the dough has to be soft in texture.
What veggies. Have you ever had this dish before. It is eaten with home made bread, foo foo ( that’s when you boiled green plantains and pound them in a matador with a matador stick dipping the stick every so often in a bit of water for texture, or some people eat it with rice). I was at an Airport in Africa once when the plane was delayed and they served it with boiled provision and it tasted marvellous.

I know some persons use pork or even chicken. I'm vegetarian and i use the vegetarian "meats" and chunks

Hi the flavor do get intense the longer it sits but not to where it's salty. If it's salty you probably over season. Just add water to dilute it.
