Perhaps its just me. Personally I never like the super glossy shine to a point that it looks plastique. To me, a regular shine would do it without drawing attention from an individual's entire wardrobe. To me, the super glossy shine is akin to wearing a Rolex watch with all the sparkling embedded diamonds.
I'm curious, how're your Alden pennies so red? I have the same ones in burgundy, but mine are much darker. Perhaps it's the lighting in your video or the leather's exposure to natural light that could've lightened them.

He uses Fiebings edge dressing when he's fine with color changes and Mod Podge gloss finisher when he wants to preserve the color. I think he's mostly neutral on conditioning the soles--there's no harm in doing it but neither is it necessary. I personally use neatsfoot oil on them every six months to keep them waterproof but nothing more.

I just bought a pair of black Allen edmond penny loafers from my small town Goodwill for 8 bucks lmao in my size too. They are not in terrible shape. But I'm trying to restore them. The black isn't as rich anymore. the heel and outsoul also lost its rich color black. Should I do a dye the shoe black again? I'm just looking for some tips. Because these shoes still have some great life in them. Thank you for anyone that can answer this.
If it’s not in terrible shape no need to dye black. Just restore the shoes with leather lotion shoe polish and wax . With that method your shoes will shine as bright as the sun

Saddle soap should only be used to clean a really soiled shoe, in my opinion. I don’t find I ever need it. If the shoe is really messed up, I’ll just use acetone and then condition. Of course I am aware that everyone has their preferences. Saddle soap is perfectly serviceable.
Remember, Preston: An ASMR must only have the sounds of the work being done, in this case, the sound of brushes on shoes, the cloth polishing the shoes, the cans of waxes and creams when you open them. Background music has no place here and completely destroys the ASMR experience, which is a real shame.

Always wear glove so when you are done there is no wax residue stuck in your nails

Likely exposure to light and his chosen polishes. If you use burgundy or oxblood polish, they will be a lot darker than if you use brighter reds.

I figure you just have to live with it, no point shining the uppers when it folds and the polish cracks anyway.

Is there a reason why you used the Shapir Lotion over the Renovateur? Is one better than the other in specific circumstances?
They work the same to me. Appear to be the exact same formula as far as I can tell though. If there is a difference, it’s negligible.
