Tips to Make THE BEST CHRISTMAS COOKIES

  • Royal Icing consistency is one of the hardest things to get right when making cookies. Do you use 1 consistency, 2 consistencies, do you outline, do you not? There are so many questions I get around this, so I've made this video in hopes to help you all with those questions.
    There's always a reason behind what I do and it mostly comes from trial and error or just experience in making thousands and thousands of cookies. I always look for the easiest and quickest way but that will yield the best results for my cookies, because in the end that's what matters most!
    With Christmas right around the corner, I wanted to put a little video together with some examples of how I use my icing, and when I use what consistency.     Thank you for all the tips! It's also really nice to see videos that aren't sped up and actually give a realistic perspective of what it's like to decorate cookies.

      Thank you so much!! All of my tutorials are not sped up, so as long as their isn't "satisfying" in the title, it's im real-time! I think it's super important for everyone to see how slow it really is!!

    Really neat tips. I like painting royal icing on cookie so that not too much icing. I use your royal icing recipe all the time, love it! I really need to start using two consistency outline and flood (I usually use flood only ). Thank you for video.

      Painting on the cookie saves so much time too!! And perfect option for those that don't like too much icing! It's nice to have 2 consistencies, find my work is much neater when I started using 2. And not only that, if you ever run out of flood icing, you can always thin down your outline icing without trying to match the exact colour again cause you already have it!

    Great video, well timed. Thank you. Is your outline consistency the icing that comes out of the mixer or do you thin that down? I would love to see a video on different tasks and the appropriate consistency icing.

      Thanks!! I usually make my icing to my outline consistency in the mixer then thin it down! I have an example in my royal icing video on how I make it and what the consistencies.     Thank you for posting this! I'll be starting to bake tomorrow for a big event right after Thanksgiving. I've been wondering how I'll get the color for Santa's face? What do you use? Btw...I LOVE your royal icing recipe. It's the only one I use for outlining & flooding. If I do flowers or details, then I use a recipe that dries harder.

      For Santa's face I usually use Americolor ivory and a touch of Americolor copper. And thank you so much, glad you love the icing recipe! I use the same recipe for my flowers too, I just stir in a lot more powdered sugar in and it works really well!

    I am just starting out with cookie decorating, I really appreciate all your advice and videos! When I do my outline, or when I try to do a fine detail, the icing seems really dry and breaks and doesn’t want to stay on the cookie, is that because I need to thin it more?

      Thank you! So happy you enjoy the videos! And yes, you're right. When the icing breaks a lot or doesn't stick to the cookie it means it's a bit too thick or dry so add a few drops of water at a time to loosen it just a touch.     These are great tips thank you!! Question: with the painted on flood icing- how do you word that to the customers? Or do you just say you can put less icing on the cookies?

    Beautiful cookies! I do have a question regarding freshness. How do you keep the cookies fresh if it takes you several days to complete the project?

      The first night I bake them, I'll put them In a Tupperware container. Then when I take them out when I'm ready to flood them. I find putting a layer of icing on them helps seal in the freshness and then they're out for a few more days and usually don't have any issues, they stay pretty fresh!!

    How do ypu get the red icing red? It always is just pink for me no matter how much red gel I use

    How can I get my Reds and greens to be deep Christmas colors. I swear I’d have to use a whole little bottle of red coloring just to get a red red.

      I find its super important to use the right colours. My preference is Americolor gel colours and Chefmaster gel colours. I have a video on red and black icing I can link below.     I really struggle with catering in small areas... even with super thick icing. What am I doing wrong?

      There's a few things I do to prevent craters. The first one is (although not always possible depending on the design), is to do your details when your your base layer is crusted over but not fully dry. The second is to squiggle some outline icing in the area (usually any small or narrow area or any area you think may crater), and then flood immediately over top. The last, is to dry the cookies in a dehydrator or in front of a fan blowing gently. There's also one other way that's come out recently but I've never tried, is when your icing has crusted over, your poke holes in the area and flood over and this also helps! In my tutorials I also talk about the squiggly lines a lot on how to prevent the craters!

      There's a few ways to help prevent that! Using a fan or dehydrator to help dry the icing, using the outline consistency and doing a squiggly line in the area before flooding, and doing your details on a base layer that is crusted over but not fully dried. In most of my decorating tutorials I show or talk about some of these steps!!
