I cooked roast chicken for my Mum yesterday. She's just had a knee replacement and is surviving on microwave meals. So she appreciated a good roast dinner. I made chicken stock with the carcass and left over meat. It turned out great! I'm going to make lentil soup with the stock. And I've got a lamb leg for another roast later in the week!
