I see it as this: Seeing as the Bow of Light is basically forced on you at the end, and all other weapons were optional, you did beat the game without weapons. Like in the no coins Odyssey run, where you had no choice but to get one coin, if the game forces you to do it, then it doesn't count as part of the challenge. So, not including the one time the game forced you to use a weapon, you successfully completed this challenge. Congrats!

My advice would to be to try and use burning grass so then you can float up and rain a barrage of arrows at them (I suggest the royal bow for this cause it has a high attack and one of the fastest drawing speeds)
just rince and repeat against them soon you'll memorize every single one of there attacks and know how to parry and counter each one. or you could just shoot it in the face until it dies

I admire your use of technicalities. Also, let’s take a moment to appreciate how brilliant of a game this is considering that you can beat the game in this way. The amount of flexibility this game allows is astounding.
Imagine a double side image (only one I can remember is the box art of Sonic Unleashed) with Link and Naofumi, with the Hylian Shield and the Standard shield parted in the middle
95% of fighting Lynels the normal way is getting the timing down for the dodge/flurry rush. And the other 5% is having enough weapons that you won't run out before the fight is over. They're actually pretty easy once you get the hang of it.

The impressive thing about SmallAnt is that when he's speedrunning, he can still fnd some extra brainpower to be entertaining. It's not like you're expecting to be laughing pretty often, or pretty much at any point, but it's just really enjoyable. Who would've known that when he's not trying to focus and pull of difficult acrobatic maneuvers and skips, it'd be even more fun to watch? Side note, it seems like these last few years there have been a lot more (quantitatively, I mean) entertaining speedrunners than previously. It's going from a hardcore gaming niche, where you see some impressive shit, to something that is legitimately purely fun to watch, with that added bonus.
With enemies continuously regenerating, I think it is impossible. I can't even kill bokoblins with boxes. (Though I was never very good at killing things with magnesis.)
I once encountered one of those flying guardians. At first, I used Magnesis to move a metal box to protect me from the lasers, but then I hid behind a wall and spent at least 10 minutes whittling its health down to 0 with only the box. Worth it.

fun fact: if you use the motion aim option, you can swing metal stuff around with motion controls. it is a lot faster and does more damage

The fact this is even possible just by using the in-game mechanics is so cool. It's almost like the BOTW devs knew people would be trying challenges like this. The ability to grab only the shield out of a pile of loot is genius! Such a cool video, and amazing job Ant! Loving your content.
