hmmm...yet another nice recipe for chicken thighs...looks very nice..."pro" tipp for you Adam if you're not a fan of mushroom consistency: what we do is to add the mushrooms rather late into the dish...so not together with the bacon but maybe a minute before you added the liquids into the pan...that way they tend to keep their texture and don't turn into the "slugs" you dislike...another option is to chop the mushrooms up as fine as possible and add them from the start...this way they just become part of the sauce and you'll have full flavor, but no consistency...try it out...it works a charm ;)

One of my favourite dishes, Adam! 😍 😋 Well done! 👍🏻 BTW, it's also very similar to another one of my favourite dishes, *Chicken Cacciatore,* which is the *Italian* version of Chicken Chasseur. ("Cacciatore" means "Hunter" in Italian). 🙂

Am Dutch and agree😃. One can make many varieties of the mash. For instance with a little less butter and milk (but always nutmeg!) + eggyolk added. Make rolls size of fingers, then bathe in more eggyolk and crumbs or (broken) corn-flakes, sesame seeds or whatever you like. Then fry SHORT IN HOT BUTTER before serving. Can be made a day or more ahead and kept frozen without coating. Some mix the mash with bacon or cover/insert a sausage.

Just made it today, and we had the neighbours round for lunch, it was super delicious, everyone loved it and we all had seconds ... i served it with a simple basmati rice tossed with small chopped mixed peppers ... the only small differences i made to the chasseur were, i added extra garlic 4 - 5 instead of 3 cloves, and extra tarragon, 2 tsp instead of 1 ( just because we really like the extra slightly more intense flavour ) and 1 TBS of brandy and 1 TBS of dry sherry. will certainly be a regular for us. thank you. ;). xx
Made this tonight. I used chicken breasts rather than thighs but it was absolutely delicious!!! The whole family really enjoyed it. Definitely something I will make again. Thanks Adam!

If you cook all the water out of the mushrooms an put a crisp on them it changes the texture..or you can chop them up really small so you don't notice them
I really like Chasseur ❤ my biggest conundrum is I have recently developed a tomato allergy 😡 so have to leave them out . Any suggestions for an alternative ? I know I’m clutching at straws here 😮

I love it, though I do vary the quantities of the hot stuff somewhat (adding more chilli in). I have some maturing in the fridge for dinner tonight. Hello Adam I have just watched you chicken chasseur video which I am going to have a go at today. Some time ago I made a comment about fish soup and you replied that you would do one but I cannot seem to see it in your list of videos. I have watched a lot of other cooks videos about but they all seem so expensive to make. Is there a cheap way of doing this
That looks a lot easier than the recipe I used in the '70's. Haven't made it in years, but I think I will try this one. I have shelves full of canned tomatoes, and even if I only use half a jar, that's still using what I have on hand. I will probably use canned mushrooms, because, for some reason, all the fresh ones around here are soft and half mushy. Any thoughts on using fresh tarragon? Start with half the amount you used of dry?
Looks fabulous! What if I do not want tomato products? My idea here is to cook 200-250g fine-diced bell peppers until they are soft and go with that instead of the tomatoes. What do you think?
In my household we'd remove the stalks and peel the skin off mushrooms. Tedious and laborious but old habits die hard. I wash and eat the stalks now cut into rings but the skins get discarded...
