If you cook in high heat with a lot of oil or butter, and you pour the steak into the skillet at the right time, then the steak shouldn't be absorbing too much of that butter.

The steaks did spend a few minutes resting, you can tell because the outer layer of it would be more over cooked and the inside would be much more undercooked if he hadn’t. The reason why there is so much juice even though it had been rested is because of the amount of butter he let it marinade in. For video purposes, obviously he can’t show the resting process cuz it’s literally just the steak sitting there and this is a short so he only has a small amount of time for the video.
