In Mangalorean konkani, we call it parwal, and bangalis call it potol as I'm sure you know. And the vegetable has flavour in its skin. Many Bangali home cooks anyway, leave strips of the skin on the vegetable, so that when cooking, the seasoning and flavours of spices are absorbed. And you get the flavour of the fried parwal/potol as well. Our Chitrapur bhanap cooks retain the skin altogether
