LFG: I (Grandpa) agree that catching fish to share with your family is an amazing blessing. In retirement I fish a great deal. I catch and release most fish, but keep an assortment of pan fish for those special family dinners. I pan fry the filets with my secret batter. Grandma and I add cheesy potatoes, a fruit salad, dinner rolls and some times dessert. The time spent with our kids and grandkids over fish dinners keeps us all young or at least young at heart. My grand daughter tells me my fish are “the best in the universe”. I pray we can do this for many, many more years. Just one downside. Once you start this family tradition it takes on a life of it’s own and you will all love it. Stay safe, God Bless.
Pal let me say as someone that grew up with these types of dinners, it’s absolutely the best thing in the world. When a family comes together for good food and great laughs it’s just amazing. I plan on teaching my grandkids just as I was taught to fish to continue the tradition of family time over some great slab crappie.

My wife and I love making crappie cakes! We've made dozens of batches over the years, and many times will make double or triple batches, freeze them on a cookie sheet, and then vacuum seal them in packages of 4 or 6 for easy future dinners. One thing we've learned over the years, is that we prefer to cook the fish first by steeping it in almost boiling water with a crab boil pouch for 15-20 minutes. That way you don't have to chop any fish and can just flake it into the mixture. Also, instead about worrying whether or not the fish is cooked all the way through when you pan fry the cakes, you can just cook them until the outside is nice and crispy brown.
Fellow Texan here from the Permian Basin. My wife also has to eat gluten free going to have to make these cakes for her. Going to target some crappie tomorrow.

I live in Canada and eat walleye all the time, pretty much once a week and to be honest I love a feed a crappie, I kinda envy you guys down south with such a great crappie fishery. It's funny how you guys just love our walleye and we kinda think you guys got something special with the sweet crappie fishery.

Hey lfg just watched the video but I have a recommendation for the poppers when I make mine I cook up some flavored breakfast sausage then mix that in with cream cheese and put that in the peppers then wrap with the same flavor thick cut bacon then bake em and eat em

There is a small lake by my home that supposedly has bass, so ideally the setup would be geared toward that. I appreciate the channel and appreciate any guidance you can give. Have you tried frying fish in beef tallow? Tallow has a much higher smoke point, healthier, and flavorful that won't take away from the overall taste of fish, but rather enhances the flavor. Pan searing fish in a light layer of tallow is so good.

My local lake up here in PA has massive schools of crappie and the 2" snacky swimmer has landed my hundreds of fish this year!
I would leave the panko out and just go with the crackers. Use just enough to bind it together...that's how it's done in the Northeast.
