I think this recipe would be equally delicious with crispy pancetta as a substitute for bacon and a slice of ripe tomato would add to the appeal. @justaghost3363 it was very awesome. And using a non stick skillet, I folded the eggs over, as I cooked them and made into the square, it helped them to be cooked well without being dry.
