How to dry fresh mint leaves as dried herbs - easy to do & not much equipment, just a little time

    How to dry fresh mint leaves at home is a back-to-basics way and that’s by air-drying the leaves.
    This is very much a village way of living where Mummy Najat grew up in a little village & accommodated many ways in preparing her winter larder, known as “mouné”.
    This is where one would collect the summer harvest & find ways to pickle or preserve its flavours for the harsh winters.
    Mummy Najat really enjoyed air-drying her fresh mint leaves, which is a combination of peppermint, chocolate mint & spearmint that are growing wildly in her little pots (really cute).
    First, using a pair of scissors you cut bunches of mint, including stalks & as much as you desire. Wash them thoroughly in cold water, lay them on a tray with kitchen paper towels or greaseproof paper & allow them to air-dry indoors but in-front of a Sunny window. Do this for 3-7 days until the leaves appears & sounds crunchy when you have checked a couple in your hand.
    Next, remove dried leaves from their stalks & put the dried leaves back on tray & allow to air-dry for a further day or two.
    When you are happy that they are extremely dried to a crisp, using a bowl & sieve (metal one is very good to use), start to press the dried leaves through the sieve rubbing them in circular motions to push the dried leaves through. Do this for all the dried leaves. You could use a rolling pin or those pestle & mortars & using the pestal to help you crush the mint leaves through the holes in sieve.
    Once finished, collate the tiny pieces of dried mint leaves & place in a labelled jar, ready to be used for your cooking.
    Nothing beats making your own dried herbs & adding them to your cooking.
