    In this episode Chef Saito is showing us how to make Korean Beef tartar Yukke .
    This recipe is a very popular dish in yakiniku restaurants.
    Below are the ingredients.
    Picana 80g
    Baby cucumber 1/4
    Apple 1/4
    BBQ sauce 10g
    Gochujang 2g
    Egg yolk x1
    Salt and pepper 1pinch
    Sesame oil 5g

    Korean style yukke?it is made of soy sauce, not gochujang. And It needs a lot of garlic and pears (not apple) .it dosen't need cucumbers.

      Intresting. I guess the version I am making is a version you can find in Japanese yakiniku restaurants. It would be intresting to understand the original. Soy Garlic and pear what elso do you put in?

    I need to try this version, whats the difference between yukke and yukhoe?

      Yukke is Japanese, Yukhoe is Korean. same thing though.

    Had one of these in seoul they used pears instead of apples, and they also added raw moving octopus. Delicious

      Asian pears are traditionally used in Korean beef tartare but never heard of the moving octopus sounds cool 😮

    I love Yukke, Saito, but I have a question. Do I need to freeze the meat to kill any bacteria or can I use it straight from the butcher's? Thank you for the wonderful video.

      Fresh from the butcher my friend. make sure to consult with the butcher and cut off an outer layer.
      Some people freeze fish to kill parasites becouse they get inside the flesh sometimes.
      With Beef cuts it's mostly bacteria you need to get rid of so as long as you eat the untouched center part of the meat you should be fine.
      But most infortant is to talk to your butcher and get clean fresh meat.
