The Sauce on Every Table in Ecuador | Where to Eat in Quito

- Aji sauce is available at almost every restaurant in Ecuador. It's their table sauce of choice, but not every sauce is created equally. From every restaurant to every street food stall, aji sauce is usually house made and it's flavors change based on where in Ecuador you are, what the restaurant specializes in, and more.
Aji is the word used in Ecuador for "chili pepper". It's actually a species of pepper - one that's native to South America. The basic aji sauce contains chili peppers, lime, cilantro, and onion. Many cooks will include fruit in their aji sauce. Sometimes bananas, pineapple, mango, etc. In the Sierra regions, around Quito, they often include a fruit that's pretty unique. It's called a tomate de árbol, or tree tomato. It's also referred to sometimes as a tomarillo. It's sort of a sweet tomato. I find the taste difficult to describe, but it adds a nice tanginess to aji sauce. You can expect tree tomatoes to be included in the aji you get with empanadas, hornado, and many other dishes.
If you come to Ecuador and you find the aji sauce to not be to your liking, be sure to keep trying it with every meal. The sauce will sometimes be very spicy, and sometimes not spicy at all.

We spent some time in Ecuador and enjoyed the Ahi sauce very much. Even though we cant get Tree tomatoes here in the States I make it with tomatoes. Not quite the same but close. Thanks for the fun video

That tomato and onion salad is called "Curtido de cebolla y tomate". It a quick pickle with lime juice and a little salt. Very good, a little acidity to cut through some of the richness of some foods.
I love learning about this stuff before our thrip to Ecuador.

Ají de Tomate de árbol is delicious, especially with empanadas! the tomate de árbol itself with a little bit of sugar and dried chilli is fantastic. Were you able to get all the ingredients for the Szechuan sauce in Ecuador? for the ají try boiling a normal tomato along with the tree tomato and blending both once peeled, pickled onions in lime are a nice touch a the end. But, as you say every family has their own recipe, hope you find one you like best.
Yes. I call it a sauce in the video but it's really just chili oil, so it's oil, dried chilis, some Sichuan peppercorns, star anise, cloves, a few other spices. Chinese shop by parque Carolina has the Sichuan peppercorns.

it's cilantro but the leaf changes when the plant goes to bolt. The flavor also changes slightly.
