They turned out very light and fluffy. I ate three and if I don't watch it, I'll be "fluffy" also. We buy lard at the grocery store but it's a compromise because it is partially hydrogenated. Getting good lard takes a trip to a meat processor who will sell it to you for rendering. When we can get it, we have them grind it for us (usually free.) Grinding makes the fat much easier to render out. Rendering is easy with a large slow cooker or an electric roaster on low. I'm not sure how Crisco is made so I can't compare the two.
Terry & I cook all the batter and stack the pancakes with a waxed "Patty Paper" between each, so they don't stick together in the freezer. They separate easily and a few minutes in the microwave makes them almost as good as fresh from the pan. We only have to make pancakes about once a week at most. How do you reheat for later? Can you keep batter in frig for later use?
