My mother is from Louisiana and I learned to make gumbo. Traditionally you use whatever meat you have on hand at the moment. It was always a poor man's dish but most of the time can have a poultry and seafood medley.
I'm from New Orleans ,Louisiana Gumbo is actually a stew and is served over rice. And the word gumbo is translated to okra in most West African countries

I have come to care for all the participants, but I see something unique in Mama Mustafa. I don't know the exact reason for it, but he seems more open and trusting. He has a acquired a dignity that is pleasing to see. He seems more comfortable with the process. I do not know if it was his trip, and the respect he receives because of it, or if he just realized that we do indeed love him, but he seems much more like a friendly uncle now, smiling and being kind in his judgements these days. This channel feeds my soul. Thank you!

I just made this and we are having leftovers for dinner tonight. With it just being me and my husband , we always have leftovers. Wish you guys lived closer because there is a huge pot in the refrigerator now. Tonight the rest gets frozen for when my son or anyone else comes to visit.. Although it isn't normally cold here in Louisiana, the cold weather is very damp so this is what warms you from the inside in cold weather.
Half my family is from Texas and half are from Louisiana, originally I'm from Houston, but I've been in Vermont for a couple of years now. Found Okra for the first time up here this past week, and I am actually making Gumbo, today.
This dish is from my neck of the woods. There are 2 gumbos. One is made with tomatoes and okra and that influence was brought from African slaves back in the day and is Creole, which is what y'all are eating. The other is Cajun, with the influence being French Canadian. French Canada sent their criminals to the swamps of what now is Louisiana. The cajun gumbo doesn't have tomatoes or okra. They're both good but I make and prefer the cajun version. I use smoked chicken in mine and oooeeeii is is good! I can't make enough of it during community events, it gets eaten so quickly. It takes about an hour just to make the roux and you cannot step away from it even for a minute because if it burns you have to start over.
Canadians didn't make gumbo that's propaganda talk. All versions of gumbo are creoles and are of African origins just like jambalaya let's stop this talk of cajuns because you can't find a version of gumbo that creoles doesn't cook, unless it's nutrat stew that's what the cajuns cooked.
I always felt the Cajun flavor profile would fit their tastes very well, and I'm so please to see how much they enjoyed it. I think etouffee and jambalaya would be popular as well. Boudin maybe not for Mama Moustafa though lol.

I hope that next time they try seafood gumbo. If you can't put shrimp and oysters, then at least maybe some fish in it. The best gumbo I had in Lousiana had chicken, shrimp, oysters, deer (venison) sausage, rice, okra, celery, bell pepper, bay leaf, onions, garlic, thyme, black pepper, butter, some flour (as a thickener), and a splash of Louisiana Tobacco Sauce. But there are many good recipes. But this was more of a Cajun recipe where they put almost everything together into one delicious stew. It had so many types of meats because it was often left-over meat that had to be cooked before it spoiled or that was left-over meat and other food given to slaves by their owners during the period of slavery in America. It was all put together and cooked in large pots to feed a large family. It is indeed a VERY healthy and rich soup. The key ingredients for all gumbos is okra, bay leaf, and black pepper. You then add whatever other meats and vegetables that you like. It can be made spicy or non-spicy, but most Cajuns and Creoles in Lousiana like it spicy. There are some recipes that even have alligator meat or rattlesnake meat in it!
While I've no doubt seafood gumbo is delicious, I doubt it would be halaal, if my very vague knowledge of allowed foods in Islam is correct. Or am I thinking of kosher?

Most schools of Islam teach that all seafood, unless poisonous, is helal (permitted to eat) because that's what the Qu'ran and Ahadith say. However many more conservative sects of Islam such as Salafis and Deobandis, teach that shellfish is haram because the Shariah says that Muslims can not eat carrion feeders. The verse was referring to vultures, jackals, hyenas, and other scavengers. But...they interpret this as also banning shell fish. In my opinion, that interpretation is a bit extreme, as even plants take nutrients from dead organisms. The intent with the verses against eating carrion feeders, was to prevent diseases often spread by animals like vultures. Shellfish was commonly eaten at the time, and it was not specifically banned. In this case however, our Pakistani friends here on this channel, probably follow the more conservative and common Deobandi schools of Islam that are most prevalent in Pakistan. As such, they probably do not eat shellfish I even know some Turkish Sufis who do not eat shellfish. But much of that belief I think stems from the huge influence of the Salafi sect of Islam around the world (heavily pushed by Saudi Arabia).

I had a beautifully browned gumbo in the Louisiana French Quarter many years ago. It had chicken and shrimp. It was one of the best things I ever tasted. I like to cook ethnic, but I never got the nerve up to try making it. I just know I'd burn the roux. 😆

Louisiana is our neighbor in Texas, so we also enjoy excellent gumbo. Chicken and sausage gumbo or seafood gumbo is my favorite. I have a friend who was raised in Louisiana who gives a great party for Christmas and make 10 gallons of gumbo for his guests, it is the best I have ever enjoyed.

On you tube you can actually do a search and find videos on World Championship gumbo also New Iberia gumbo contest 2022 etc. Gumbo is an acquired taste I think. Being a mid-western, there is not much deep south foods I would consider as they use a lot of spice, quite often. I'm with Mustafa when he likes his food not all mixed together.

And move on to the West African kitchen which got some of the most tasty food there is, Benachin from Senegal, Nigerian Jollof Rice and Suya, Fufu and pepper soup from Ghana.

I don't know if the Gumbo Championship does free food distributions or not, but I'm certain that there must be food charities in the South that use gumbo or jambalaya because of how far you can stretch it.
In America the poor are fed for free at soup kitchens! Because soup can go a long way to feed many people and has health benefits. Especially chicken noodle soup. The vegetables are cooked and the broth contains the vitamins. Cooked vegetables are easier to digest than raw.

They leave pork out of stuff because Muslims don't eat pork and many Hindus don't either so that would be part of the reason they probably used just chicken and I saw some shrimp, the spices may have been pretty much the same though
Mama loved Canadian food. ... Gumbo is a Cajun food and the Cajun people are descendants of the Acadian people from Canada. So in a way, this is another dish with Canadian roots that Mama loves.
there are two styles of gumbo, creole and cajun. the roots of the dish are african. okra itself is an african vegetable and the name "gumbo" comes from okra's name in various west african languages, "ki ngombo." it's definitely not canadian in origin, even if the cajuns originally were acadians.

Gumbo is only PARTLY from Africa... the dish combines ingredients and culinary practices of several cultures, including African, French, Spanish, and Native American Choctaw. Gumbo may have been based on traditional native dishes, or may be a derivation of the French dish bouillabaisse, or Choctaw stew, but most likely all of these dishes contributed to the original recipe. It was first described in 1802, and was listed in various cookbooks in the latter half of the 19th century. But Africa, Native Choctaw, French and German all contributed to the finished product. This is what, imo, makes the USA so successful, the diversity of cultures, cuisines, ... the melting pot that combines the best of all who join with us.

The gumbo I make doesnt have celery or bell peppers. Even tho every wiki says it usually does. Many of the gumbo iv had doesn't have bell pepper past paprika. I wonder how many of my southern brethren use bell peppers in their gumbo.

Okra is used all over the middle east and India/Pakistan.

I made gumbo once. I used sausage and shrimp instead of chicken. I accidentally made it too spicy though.
I'm glad they're enjoying whatever that is. But trust me that's NOT Louisiana gumbo.
They leave pork out of stuff because Muslims don't eat pork and many Hindus don't either so that would be part of the reason they probably used just chicken and I saw some shrimp, the spices may have been pretty much the same though

Mama loved Canadian food. ... Gumbo is a Cajun food and the Cajun people are descendants of the Acadian people from Canada. So in a way, this is another dish with Canadian roots that Mama loves.
What kind of Canadian food? I don't think he tried any French Canadian treats, the rest of Canada is not French as I'm sure you may know.

there are two styles of gumbo, creole and cajun. the roots of the dish are african. okra itself is an african vegetable and the name "gumbo" comes from okra's name in various west african languages, "ki ngombo." it's definitely not canadian in origin, even if the cajuns originally were acadians.
Just to set the record straight. Gumbo is only PARTLY from Africa... the dish combines ingredients and culinary practices of several cultures, including African, French, Spanish, and Native American Choctaw. Gumbo may have been based on traditional native dishes, or may be a derivation of the French dish bouillabaisse, or Choctaw stew, but most likely all of these dishes contributed to the original recipe. It was first described in 1802, and was listed in various cookbooks in the latter half of the 19th century. But Africa, Native Choctaw, French and German all contributed to the finished product. This is what, imo, makes the USA so successful, the diversity of cultures, cuisines, ... the melting pot that combines the best of all who join with us.
Just stop it, just say you don't want to give credit where where credit is due. There's versions of gumbo everywhere there.were Africans and no french, Spanish or Choctaw. It never fails. They even have gumbo where it originally came from Africa. Stop the madness you do this jambalaya also.

The gumbo I make doesnt have celery or bell peppers. Even tho every wiki says it usually does. Many of the gumbo iv had doesn't have bell pepper past paprika. I wonder how many of my southern brethren use bell peppers in their gumbo.
