You will need to implement row level security in SharePoint which I do not recommend. Dataverse is a good option for you to host data.
Nice video! The only issue I found with this video is you migrated a SPO list with some choice columns. I tried to create a Dataflow to migrate a SPO list data with choice columns (some are multi-select choice columns) to Dataverse and once in Power Query, there are no choice column options so you are stuck with text column types. Can you explain how you successfully migrated those SPO list choice column types? Thank you.
I think you will have to migrate it as text columns and change the column type to choice after migration.
Yes, I've been playing with that too. Seems when migrating SP list data to Dataverse EVERYTHING is a text field. "NOT". I appreciate this video but Microsoft: That's the furthest thing from useful.
I came to check out Dataverse and PowerApps in Teams and have had nothing but a negative experience. Nothing works as planned, everything is text field and trying to use SharePoint lists sure does not work properly in PowerApps in Teams. AT ALL contrary to every one with a video.

Yes, you can change the display name of the column.

Yes possible, once record migrated to dataverse table, you can initiate delete old record , or better flag old record as archived.

why when I refresh the data flow incrementally, the records are duplicated in the Dataverse?
This set up is only to copy data once.
