    I just tried the recipe, the pizzas turned out amazing!!! I initially wanted to wait for the poolish to ferment but gave up and ended up using it a couple of hours later. I baked mine in the oven on the highest setting (250°C) for around 5 minutes. I didn't use a torch or 00 type flour and the dough turned out very soft inside! I also used corn flour instead of semolina and my pizzas don't have that rustic looking crust but regardless the flavour and texture are there! Next time I'm definitely fermenting the poolish :)

    No need to burn crust with torch. Just pop pizza into a toaster oven
