Because we’re all spread over the country, Thanksgiving and Christmas are the only times where I actually get to see my relatives and because we’re also such a food centered culture, we get to treat each other with dishes we try out that are new or rehashed and improved from the previous years! My offering to Filipino Thanksgiving is black eyed peas cooked using a pork bone broth base with spinach and other garden greens served with pork rinds. The chicharons crackle and pop as the fried skins rehydrate as they come into contact with the cooked peas!
