How to Make Christmas Gin Punch - The Victorian Way

Mr Lincoln, the butler, is very busy with Christmas preparations, so Mrs Crocombe is making some Christmas gin punch for the servants in the kitchens of Audley End House.
INGREDIENTS
250g Brown Sugar
7 lemons
750ml Gin
750ml Ginger Wine
250g Honey
A Pinch of Cloves
1 tsp Cinnamon
1 tsp Nutmeg
Hot Water
METHOD
In a large bowl, add the sugar, nutmeg, cinnamon, cloves, lemons, honey, gin and ginger wine. Add some hot water to your taste and give everything a good stir. You can then decant your punch into a decorative bowl and serve.

More that a big burly man would be able to handle more liquor than a small scullery maid.
My first thought was, "Not for that strumpet!" But, I then realized that a scullery maid would have been a teenaged girl who could get sick on a strong drink. Mr. Lincoln was a full-grown man who likely preferred a "kick" to his punch.

Thomas Moss, not only did he prefer a kick, but he would be more accustomed to drinking. Mrs. C would keep an eye on her kitchen staff and not allow them to drink regularly. One of the perks of Mr. Lincoln’s job would have been to taste the wines and spirits, and to finish partial bottles of wine.

I made this yesterday at Christmas dinner and everyone loved it. It was delicious, liquid Christmas in a punch bowl. My cousin, who's a bartender, even asked me for the recipe. Thanks for such a delightful drink and happy holidays!
And for my fellow Americans who want to try this, here are the measurements I converted. Note that when I made it yesterday, I cut them in half and it still made plenty for a group of ten people:
Victorian Christmas Punch
1 cup brown sugar
1 t. nutmeg
1 t. cinnamon
A pinch of cloves
7 lemons, sliced
1 cup honey
1 750ml bottle of ginger wine
1 750ml bottle of gin
3 cups hot water, or more to taste

They don't really sell ginger wine stateside, so would you recommend infusing ginger in white wine as a substitute?
@@deathpyre42 I don't know. I live in the States (California) and I was able to find ginger wine at my local BevMo. If you can't find it where you are, I would say yes, maybe try infusing ginger into some white wine.

I’m not sure how lit you can get from a punch made with 3 cups Gin, 3 cups Ginger wine diluted with 1 cup honey and 3 cups hot water.
@@AlbertaRose94 That's still 6 cups of alcohol. 40% for the gin and, if the ginger wine was made with brandy, somewhere near 60%. The hot water is quite necessary.

@@scarlett6015 Ginger wine is about 14% ABV. So that's 300mL alcohol in the gin, 105mL alcohol in the ginger wine, compared with a liquid total of 2500mL. The total alcohol content is about 16% ABV, or only slightly higher than a full-bodied red wine.
Considering how much gin went into that I’m surprised Mrs Crocombe wasn’t completely sloshed after just one sip!

Nah the boiling water diluted the alcohol

I’ve just made this (in a far smaller quantity) and it’s delicious. It’s winter here in Australia, and my husband and I both have headcolds, and it’s done us a power of good. Maybe it’s the medicinal qualities of the lemon, ginger and honey... or maybe with all that ginger wine and gin, we just don’t care! 🤣

I make something similar to this one I am under the weather. I make hot black tea, and add honey, lemon, and blackberry Brandy. I drink it as fast as I can, as hot as I can, and then go to bed! Guaranteed to sleep like a little baby. Now, whether you wake up feeling better or not is questionable, but you're definitely getting a good night's rest.
Gin was traditionally considered good for sore throats and coughs, and combined with lemons and ginger, there's probably something to it!

-Edgar dancing to nonexistent music
-Mr. Lincoln and Mr. Vert drunkenly beating the snot out of each other.
Mrs Crocombe, come quickly. Mr. Lincoln, and Mary Ann drank all the punch. Now they're playing sardines in the linen cupboard. 😂😂😂
The comment "Suitable for Mr. Lincoln but not my scullery maid" makes a lot more sense when you know scullery maids were anywhere between 12-16 or younger. Yeah don't give the 12-year-old gin

Nillie and while it’s a stretch she was probably Methodist, it was common for working class Britons in the 19th century to be Methodist and they were at the forefront of teetotalism.

Not where my family were from, very low church and Methodist, My Grandma however did a 180 and went High Church when she got freaked out when she went to a full blown evangelical sermon in her 20’s

This is a very ancient recepiy, The Romans used to drink wine with all sort of spices and honey, and it was always diluted with water.
Yes the Romans thought only barbarians drank wine neat, half and half wine and water was strong for most.

She's not an actress, she is a historian who works for English heritage educating people about the Victorian kitchens and recipes

I made this for Thanksgiving and for my work Christmas party and if you can't find ginger wine, you can use ginger liqueur as a substitute 😊😊

This is one of Mrs. Crocombe's shorter videos(just under 3 minutes) however it's one of the most satisfying to watch as she pours in each of the ingredients to the bowl.
I'm Mexican and really really love this kind of recipes. I'm fascinated and I wish to see more of them in the future.

The comments about using a whole bottle of gin make me smile. This punch was not going to be drunk by Mrs Crocombe, the butler and the scullery maid, but by the whole staff. This would include kitchen maids, housekeeper, several maids, several footmen, the grooms from the stable, coachman, gardeners, and others. One bowl of punch would provide enough for the staff to raise toasts to the Queen, Lord Braybrook, Lady Braybrook and possibly the heir to the estate. Although this punch would have a strong flavour, it's alcohol content would be diluted as neither the butler, in charge of the male indoor staff, nor the housekeeper, in charge of female staff, would want drunken staff. I'm sure though, that the senior staff would gather in the butler's pantry, or the housekeeper's room, for a few additional "nips", whilst the junior staff would have fairly weak beer, ensuring that they were ready for work in the early hours of next day. Although a drunken butler might hold onto his job, other servants, even at Christmas, would face instant dismissal if they were discovered drunk.

We have a locally produced gin here in Berlin, that would work great for this recipe, though. "Brandstifter" - it has a mild flavour and pronounced citrus notes...hm, I wonder if this would make a good cold summer punch as well. I really like the idea 😊

Saved and bookmarked this to try for Christmas this year. I mean, it would be rude not to given it’s history and all that! It’s not drinking alcohol, it’s drinking history! I’ll have to substitute the honey though for agarve syrup (which has the same taste and consistency) but can’t wait to try it and report back in a few months!
