Most of the Frito pie recipes I've seen and made involve chili with beans (either canned or homemade) poured over Fritos with cheese and onions added on top. I've never been completely pleased with them because they almost always turn out to be a glorified bowl of chili. Your recipe is unique in that it doesn't use chili as the main ingredient, but rather makes a meat filling without beans over a Frito crust, which to me sounds completely irresistible! I also like the idea of using enchilada sauce to create another layer of flavor in the dish I am definitely going to try this recipe tomorrow night. I also must thank you for the kitchen hack you showed about using a paper towel to absorb excess fat--it's simple, foolproof, and doesn't require a colander or tipping the pan to spoon out the fat. Thank you for both the recipe and the paper towel trick!
