  • Todedevu Malnad special recipe | ಹಳ್ಳಿಶೈಲಿಯ ತೊಡೆದೇವು..! | Crispy Layered sweet recipe | Todedevu
    Todedevv is a special, famous traditional dish of Malnad. Even though it is famous, many people aren't aware about it. This requires a special preparation method. Traditionally it is prepared by using an earthenware pot especially designed for this purpose. This pot is placed invertly while cooking. The batter is made by using equal amount of (rice+rice flour) + Jaggery. The batter should be ground fine and straining is also required. Batter is very liquid like water. (Neer dosa batter). A clean cotton cloth is required to dip the batter and spread it over pot. An areca leaf sheet is used for lifting it up. Need to note the folding method also. Proper folding method must be followed. It turns crisp after cooled, then airtightly packed things can be stored upto 1 months. Ghee can be best combination for this dish.
    Ingredients-
    Rice flour 1.2 kgs,
    soaked rice 300 grams totally 1.5 kgs Jaggery- 1.5 kgs.
    Both in equal quantity.
    Oil for greasing

    Todedevu is very rare even in Sirsi now. we have to buy it in store or have to order it from someone who prepares, the process of making is bit difficult and now a days people not showing interest to prepare it.. Its delicious when we dip it in milk and have. Thanks for showing our traditional food. 😊

    In Coastal Andhra (Probably Konaseema, a region in Godavari delta) people make a similar kind of sweet called Putharekulu. One difference is they don't add sweet directly to rice batter instead they use sugar powder with some dry fruits for stuffing. This tells a lot about history of migration of some communities in coastal Karnataka.

      Similar dishes can be originated in different places independently. This a signature dish from our area and as far as I know none of the communities here have migrated from coastal Andhra. Also, I have tasted the dish you mentioned and it is quite different from Thodedevu.

    Very interesting recipe. This instantly reminds me of a similar North Karnataka recipe called 'mandige'. Very famous in Belgaum. Mandige is prepared using wheat flour or maida, chiroti rava, sugar and ghee and is roasted on upside down mud pot. Mandige is a special tradirional sweet served in marriages, munji functions. It is crushed and eaten with ghee and milk.

      @@drsudhir25 Try finding any Havyaka lunch homes. There are few around Girinagara. If they don't sell it there, they might help you procure it from Sirsi. And if can get it and don't like it with ghee, people also eat it with cold milk. I prefer eating with milk rather than ghee so that I can eat more 😬

    When we were young we use to get sweets made of jaggery or sugar maximum 20/25 days in a year. Those days are heaven for us. Now childrens have sweets and any type of food almost daily. And no value for it also. The above sweet is very traditional. Very nice.

      U can also soak it in milk ( instead of ghee) & eat, It gives another taste! Earlier every Havyak house in Malnad region used to make it during Alemane season. But today it has become a rare thing! Gone are the golden days!

    Similar sweet is made in Andra but it stuffed with jaggery or sugar powder. Here they mixed the jaggery alongwith the rice batter.

    Nododakke putareeku Mattu todedeu maduva vidhana ondr tara ide.adre putareeku tindidini. Tumbha padara padra vagi ( cream white) colour ittu. Sugar upayogisabahudu ansutte .adre tumha tasty .
