Thanks for sharing, Market Street sells an amazing Carrot Souffle and that is what I am trying to recreate. How sweet does yours come out. Theirs sits perfectly on the line between sweet and savory. That is what I am looking for.
You said 2 lbs of carrots so I got 2 lbs of carrots ready then had to go over to your website to fet the exact measurements and I see 3 1/2 lbs of carrots…that’s almost double. So now I just have to downsize by guestimation
Just wondering if you had separated the egg whites out and whipped them with a little cream of tartar then folded everything back together how that would have turned out.
I'm on Keto and though carrots are not, I love this and I do use any type of Keto sugar substiute I have on hand. I also use a hand mixer as my family does not like pieces in it.
All the Piccadilly cafeterias in my area are gone..... I miss them so much... people are so woke nowadays they can't enjoy Southern American Cooking.... they have to Virtue signal about some exotic grain from South America or some ethnic vegan dish
I consider us lucky, the one in Nashville (near my home) is still open. Grew up in Morrison's Cafeteria and then when they closed, Piccadilly! Best mac and cheese, ever!

Iv been trying to figure it out but no luck :( It seems like a lemon tiramisu ? Would be awsome if you did a video on this . It was amazing !! The sauce and cake . OMG ! Soooo goodddd.! i use applesauce instead of sugar, still taste great because carrots are really sweet anyway. love your recipe thanks for sharing

Can I substitute the sugar with Stevia?
I don't honestly know, sugar is often needed for the structure. I would have to test it to say for certain.

Ander Ander I used to eat at our Piccadilly allll the time! Fried chicken, Mac and soufflé was my choice meal! I definitely miss it

I was a mgr for Piccadilly and I made this often. We DID NOT peel the carrots boo.
