Homesteading and canning is a very rare thing here because its hot whole year around. So I enjoy watching you canning and preparing different recipes.
Digital canner tip: If you hold down the forward button for three seconds it will skip the warm and fill jars stage and go to the heating stage in preparation to pressure canning or boiling. This is handy in case you fill your jars cool and want to move on to the processing quicker. Saves about 20 minutes in the process time.
You encouraged me to do a big canning day , took me from Saturday morning when I started soaking my beans to Sunday afternoon when I was finished I had a total of 75 jars for my pantry . I did 60 pints of 4 different beans , Black Turtle,White and Red Kidney beans snd White Navy beans and 9 Quarts and 6 pints Zucchini Apple pie filling . So fulfilling to have that to add to my pantry storage . I will definitely add this soup and carrots.
Idea- buy a case of canned chicken meat. It’s great for soups and casseroles etc and even canning chicken meals when you need a bit more meat then what you have, It’s also great for long term food storage and in case of power and freezer failure. No likely as you are well planned but as Hurricane Helene taught us in the southeast USA- rare weather does happen. I admire your work and creativity so much. God bless.
We've had The same ankarsrum mixer in our family for around 50 years. It has been passed down through the family and it is great! Fingers crossed yours will last as long! My grandparents on my mothers side actually comes from a small village close to the town of Ankarsrum in Sweden 😊

Americas test kitchen here on the US usually promotes kitchen aid. But just this week they compared your mixer to the kitchen aid and yours won I personally like my Bosch it is similar to yours but it’s German made it handles my double and triple bread dough recipes

Snow in October is pretty common here in Denver, especially on Halloween. Most of my Halloween costumes growing up were made or bought big enough to go over a winter coat.
Chelsea I miss the snow. I lived in Alaska for 20 years and definitely miss it. I’m in Missouri now and hate it. The summers are to hot and humid. I want to move to Idaho where the winters are colder and have snow❄️. Thanks for sharing your video. I always watch but I usually don’t say much. ❤

I do grow a little garden, but it’s mainly tomatoes, cukes, peppers etc. it’s extremely hot and humid here so really can’t grow the variety u do. But I do get over to plant city fla quiet a bit to pick up bushels of things to can.

You’re a busy bee, Chelsea! I’m thinking of you while I cut up tomatoes for the dehydrator. I’m sprinkling on dried basil and a little parmesan to make tomato chips, they’re so yummy!
I dehydrate tomatoes as well. I have not sprinkled parmesan on them but have primarily Italian spices and herbs. They are sooooooo good on sandwiches! I will try the parmesan, how long do the tomato chips last with parm on them?
Ww haven't had snow here (in the Middle East) for three or four years! Hoping that it will snow this winter! In the meantime, we're waiting for the very exciting first rain.

I’m Hispanic so I make my own Mexican blend as well all the time I call it house blend because we cook a lot of authentic Mexican dishes pretty much on the daily but it actually works really good with the steak and a chicken rub. It works great so I make it or not I just made me a new batch.
I got a case of jars from Walmart this year on clearance - there was a rattle inside the case like one of the jars had broken. When I opened it I found that all 12 jars were complete but one of them had a piece of broken glass inside it!! I have to say I was pretty relaxed about washing new jars before that experience - no more! It never occurred to me that broken glass could be inside the jars from the factory!
Hi Chelsea. First off I want to say how much I love watching all your videos. Needless to say I'm definitely going to be canning up this enchilada soup. Just a little bit of information, there is a Mexican oregano that is used in Mexican spice mixes. Although regular Italian oregano can be used in a pinch Mexican oregano has a whole different flavor. I have heard, I've never used it, you can also use majorum in place of Mexican oregano. It also has a much richer earthier smell than the fresh bright smell of Italian. I really want to find a plant or seeds for next year as we use so much of it.
