    I'm Brazilian and in class we count 1 2&3 4&5 6&7 8&1...

That way of counting is more popular in the US now too! It's also more accurate to the way the music is written, so it makes a ton of sense to count it that way as dancers.

I would have loved to hear way, way more in-depth about the music. This is extremely superficial and very drawn out and simplified past the point of being wrong in some cases. (E.g., the "and" should be in the middle between the numbers, like 8ths, not like 16ths or 3/32 or whatnot.)

Hi Marcus! Thanks for the feedback. I want to be clear that this video is intended for dancers, not musicians. The notation shown is for visualization and is not a piece of actual Zouk music. The counting options are for dancers and are not supposed to be representative of exact musical notation. My aim was to bring in just enough musical knowledge to be helpful for those who are not interested in going deeper into the depths of music.
If you are looking for a more music based look at the Zouk Beat I recommend this video by a DJ: ruclips.net/video/AI9fp4MrWIc/видео.html
I highly recommend this channel for in depth musical theory: ruclips.net/video/xTOOWe_yLwY/видео.html
      Hope this helps!

Probably I'm the only one who counts left chic chic, right chic chic (left is on 1 for leads).
Also I see very often, great dancers, dance on 1 a part of the song, then a little bit on 5, then again on 1. If this happens to me, is it a deadly sin or allowed?

As long as it works for you saying left, 1, doom, or whatever else is fine! It's about what works for you. As for your other question, Zouk doesn't have phrasing like Bachata does. However there has been more of a push in the last several years to make Zouk more like that. In my opinion, if it works for you and your partner on the dance floor, you're both having a good time, and you/those around you are safe then you're fine. Dance is a form of expression. The structure is there for you to use to communicate and connect, but not to lock you into a rigid set of moves. As you get more advanced you are expected to play around more, have fun, and express yourself. I hope this helps ♥
