    Hi - how much flour was in the recipe please? I am new at keto sourdough and have got myself thoroughly confused! I cannot get into Victoria's youtube video on making the bread (it says 'private'?) but I do have her sour dough starter recipe. I am using a wheat flour based starter which I have transformed into a keto starter using VKF 2.0. I did add some inulin to the starter a couple of times to make bubbles faster. Thanks for your video as it shows exactly what you did.

    Don’t feel bad I tried like 3 times and gave up. Always wet and collapsed no matter how long it stays in the pan or even on the oven (off)

    I know someone who has a sourdough starter that's 125 yrs old~ have to say, THAT creeps me out. My mom had the same as yours, only it was called something else- a silly/gross name I can't remember. I think the name was based on what part of the country you lived, & we were in WA State, so who knows. "Friendship Bread" sounds nice though.
    YOU are an absolute trooper Stacy! My goodness ~ thought I had the patience of a saint...you win! 🏆The out takes are the best guys, I swear~ you could do entire posts of just those & justly entertain the masses Hilarious.
    Maybe the bread results have those typical variables at play? You know how humidity, elevation, different ovens, & whatever other dang juju is in the room~ can be frustrating for sure. I can tell you're determined to keep messing w/it , even though it was clearly break time at that point. Personally, I've never been good w/bread- even the regular kind- & I'm a lifelong cook/baker/candy maker person. Bread has always been my nemesis somehow, plus I think if I actually make one I like I'd eat myself into a coma w/it. I remember trying to duplicate apple or blackberry fritter donuts one time, & was SO pissed that I couldn't get them right! I ended up bagging the whole thing, which is unlike me since I'm pretty determined. I stick to things like cheesecake & anything I can make w/cocoa butter~ LOVE me some cocoa butter treats! I buy it in 5 or 10 lb bulk now. There's a blondie recipe I found made w/it that I want to try, but have to get a dependable oven for the RV first. Speaking of pissed, I've gone through 2 (TWO!!) different Ninja ovens now~ never, ever again. SO disappointing that they're supposed to be top of the line for the category & both are worthless- almost $500 later.
    *Still looking for the perfect air fryer grill for cooking steak/meats too. It's been a serious shit show on that front as well. Deep sigh. Moving on. Thanks for this post, can see it was an ordeal so you'll have to update if anything/alterations worked out for you? Sammy in AZ

      Holy crap!!! 125 years??? That is just insane! I remember the one my mom had smelled so bad...I don't know if that's because she left it out all the time? I've been keeping mine in the fridge after that first week, and it smells like sourdough to me, not the nasty, goopy mess that my mom had. However, I wonder if the difference is the ingredients...wheat flour vs. the Keto flour mixture. My mom watched this video and said she couldn't believe that I remembered that. I was like, well...that kind of stink will leave an everlasting impression on a kid. 😂 But oh man, patience...I don't know, that is NOT something I have in spades. You should see me with technology when it doesn't do what I expect it to do. LOL
      I LOVE including the outtakes - not only does it remind everyone that we're real humans (LOL), but I feel like, if it makes me laugh, someone else is going to laugh. And Greg can be pretty funny (don't tell. him I said that though, hahahaha).
      Greg got really into breadmaking for a bit, had all the things needed to make really good, homemade bread (both in the oven and in a bread maker), because when Greg goes in on something, he's ALL in. 🙃 I have only ever made flavored breads prior to Keto, like banana bread and stuff like that. After starting Keto, we got real heavy into the Macadamia Nut Bread for a good long time, but it's been forever since I've made any of that. We had a pretty good cinnamon walnut bread recipe going too. And we have a pretty good dinner roll/hamburger bun recipe, but it's been even longer since we've made those. I've definitely tried a few of the other "bread" recipes, but haven't found any that I truly love yet. Baking Keto friendly bread is a whole other animal from regular bread...it's kind of interesting.
      I've always been on the sweet side of all baking/cooking as well. That's what I used to do for family and close friends for Christmas - super yummy treat baskets. I used to make 10-12 different cookies, and I'd make dozens of each kind. It was always literally a 2-3 day bake-a-thon that I'd have to take time off of work to do. But once we started Keto and got rid of all the old ingredients, I stopped, because while I love my family & friends, I don't love them enough to spend five times what I used to spend on ingredients. 😄
      What Ninja oven did you have? We've had really good luck with our Ninja products. We've had to replace the blender/food processor system and the Foodi since we first bought them, but that''s because those things get used almost daily. Since purchasing those, we''ve also acquired the toaster oven thing that can also air fry, and another tabletop grill/air fryer thing (I think they really have a thing for air fryers, lol). And we've really enjoyed using both of those too. We actually have the grill/air fryer, a Foodi and the blender/food processor with us in the camper. The rest we've left at home (yes, we have two Foodis.....we have a problem, lol). Can't say that we've used the air fyer/grill for steaks yet, but Greg used it yesterday to make some ground chicken burgers that turned out well!

      @@KzooKeto I think that was my main problem~ I wasn't accepting of these appliances needing replaced w/heavy use. It took me a long time to even start buying them, since I kind of considered them luxuries in a way~ not anymore=). Plus, I'm not someone who wants to spend more time cleaning & maintaining a device than I did cooking with it. I've learned, & come to accept that if I want the convenience, I have to accept it's cost something in return. Also, it was a fluke that the Ninja Foodi Flip oven we bought at the same time happened to be a rare dud. The heating element never fully engaged, had hot spots & has never heated past about 350~ though 450 is suppose to be max. Problem is I missed the return/exchange window because I didn't really start using it until we'd been on the road 6 mo's. So now I just use it to dehydrate meat for jerky & meat chips. In all fairness, the Ninja Grill/Air fryer did get heavy daily use & performed well~ it just became impossible to clean & was fire hazard as it filled up w/grease & black goo internally~ was oozing out of the seals & cord connection- even the feet on the bottom, the screw holes. SO gross~ I chucked it after a year of use. I swore off Ninja products~ like a petulant child~ UNTIL I found the one I just bought🤣 the Ninja Sizzle Indoor Grill & Griddle, which so far I love. Super easy to clean, gets up to 500 degrees, which is what I need for the amount of meat we eat., etc. Just can't stay away😆I guess~ they really do make good products. I'm just really frugal w/certain things, but I'm learning. Especially since being in this little RV, which we may be upgrading here soon, who knows. Just sunk a bunch of $$ into it at the VW mechanic- new starter & ignition was several K- they had to tear down the whole dash/steering column/wiring. These motors run strong for up to 500k, but you're gonna pay for repairs & maintenance. A truck & pull behind may be next, who knows. We really love that it drives & parks like a van, plus gets almost 30 mpg~ so that's hard to give up too.
      Ok, here I go filling up the page again dang. We really need to get together sometime...somewhere~ the familiarity is uncanny, even our respective broods. Dan will walk by when I'm playing a video & say "seriously?" "who are these people & how did they film us like that?!" I have to keep reminding him we're just not that unique or special, hehe~ he begs to differ, of course.Tty again soon lovely StacySammy Whitson

      @RV-there-Yet hahaha, we’ve found that with other channels, where people will remind us of us. I don’t blame you for swearing off Ninja products for a while, that’s nuts!! We’ve been lucky enough to not get duds, thankfully. But I’m sure our time will come, always seems inevitable. 🤷🏻‍♀️
      It would be a lot of fun to meet up, especially since we’re starting the travel/rv channel.
      We’ve discussed the motorhome option, but I just don’t think it’s enough room. It’s bad enough when we’re working, both on calls with headphones and whomever we’re on call with can hear Greg or myself on a different call in the background. I like the thought of the C class or the super C, but that would only work if one of us has a little more leeway on things like that. 30mpg is amazing! I think we get 10 on the truck when we’re towing. Good thing it has a huge tank! 😂

    After watching you do all that work Stacy I’m glad to say I don’t care for sourdough bread. That said I will still watch your next attempt 😬hopefully it works out for you 🙋‍♀️

    I have to tell you that, everything I have made with her flour has turned out wet! I am an experienced baker. The only things that turned out were cookies. I used the bamboo fiber also. Good luck

      Ohh, good to know!! I wonder why that is…maybe a little more xanthan gum in the mixture if you’re making bread? I definitely wouldn’t call myself an experienced baker, but I have definitely been baking since my teens.

      Me too. Plus it deflated on all loaves. Had a glutinous chewy texture. Had to throw all out. 😢just tried Keto Upgrades recipe. Its promising but to grainy. Just dont like the almond and coconut texture especially with psyllium husk added. Like eating sawdust.

    No yeast makes it more sour. With yeast, has a more sweet smell
