  • This Chicken Chopped Cheese on the griddle is similar to the classic Chopped Cheese sandwich, except with a Southwest kick! We added some Sazon seasoning, bell peppers, and onions to ground chicken and made it just like a chopped cheese on the flat top grill. Instead of American cheese, we used pepper jack for a little spice. And we made an awesome sandwich spread with canned chipotles in adobo and some spices.

    Neal, you absolutely killed this cook! 90% of the spices in my pantry are from Badia, and Sazón is a great go-to. Knowing this is the Camp Chef's final go is bitter sweet, as you know I got mine because of your channel. However, I love watching all the cooks on all the toys!

    I am new to flat top grilling but I have had amazing success with using MAYO instead of Butter on all my bun toasting. You should give it a shot. It turns out better than butter I'm my opinion.

    When I worked at subway I used to create own creation with their seafood delight, bacon, cheese, and their sweet onion sauce... it was my favorite homemade creation I had there. For some reason this made me think of that, a seafood version of this with crab and shrimp or lobster sounds great to me

    I'd love to see a review of a Nexgrill griddle, or even the Expert Grill from Walmart to see how they stack up against their pricier counterparts. I think there are a lot of people getting into flat-topping that might gravitate toward a less expensive model hoping for similar results.

    That's a great looking sandwich! Because of the lid on the Pit Boss it looks like it will be harder to use it for filming. Thoughts?
    Like you, I have way too many grills. I see the Weber Summit Charcoal over there. What do you think of it? Would you buy it again? It's on my radar if I find the right person wanting to get rid of one.

      Yeah the filming part sucks...but on the Blackstone I took it off for a different view...If I was not filling i would recommend a hinged hood to anyone..
      Lets make it quick I LOVE CHARCOAL and grew up on it...I LOVE WEBER and grew up on it...I have had several webers in my life and the Summit is great..is it worth the money probably not...I wish you could buy a bigger performer for 75% less..its a 22 in and the summit is either 24 or 26 and Definitely is bigger...performance wise I think they are close...I never have regretted buying it but think the price dosnt match the hype.
      Now that being said hear me out...We do NOT know each other...never met and I stand by this comment 100 to any one anytime...
      I just got the PIT BOSS Navigator Pellet smoker and its has blown my expectations out the water...easy to use...easy to clean. and flawless with a touch of a button...just my two cents...
      The ability to smoke than turn a button open a lever and pure flame...although the sear area is small like anything pros and cons....ok rant over

    Try carygold butter for toasting bun maybe. I love it for grilled cheese. It's irish butter. It's a bit pricey. I paid 4 dollars for a half pound but it's a good level up in my opinion

    You might like that Sazon seasoning so much because it's mostly MSG. It does not agree with some people. It's used in Chinese food a lot.

      It has ceramic surface...it says non stick but not because of teflon...its the ceramic that makes it...but in reality after 6 months of hard use its not really non stick as much as it is just a lot easier to maintain for some especially when they dont cook for a long time or use in a rv or just don't like the idea of maintaining the seasoning...

      I don’t have experience with that one. I do know that in our Griddle Group on FB. We have a lot of people that swear by them. Just don’t know how many of them have tried other griddles to get a good gauge at what some can do and not….

    Neil, I'm noticing you are using metal utensils on the Pit Boss Griddle. I thought when you first received it you said you should use only silicon utensils, set me straight, thanks. I watch your channel all the "tom" (time)

      This is definitely a hot button topic… And my answer would be that you have to use metal utensils AT YOUR OWN RISK. The actual Pit Boss Ultimate griddle manual says “non-metallic utensils”. I know of a handful of Ultimate griddle owners that have been using metal utensils on their griddles for a while and they’ve said that there hasn’t been any damage… but like I said, you have to use at your own risk - I’m sure that Pit Boss probably won’t replace your griddle top for you if you damage it with metal utensils. Also, there’s a difference in the types of metal spatulas... my preferred spatula has rounded edges and does NOT have the sharp beveled edges all around. That’s the spatula that I like for my other griddles as well. I would never use a square ended, beveled edge spatula on mine. Also, you’ll notice that I still use a wooden scraper/spatula to actually scrape down the griddle surface (NOT a metal bench scraper like I use on my other griddles). So the short answer is use metal at your own risk, and if you decide to use metal on yours, be careful about which metal utensils you’re using and how you use them on the surface.

    Looked absolutely wonderful. I'm curious on the paprika, did you use hot,sweet or smoked? I recommend folks have all three in their spice collection. On the bread I think it's best to occasionally switch up your breads on things like this to keep things fresh. And it makes sense to let go of the camp chef. It will find a new home and make those folks happy. Of course if space is a problem you could always add some new deck/porch area? 😁😆😅🤣😂 FYI its time to put out the bee traps. Same here. The yellow jackets are beginning to be a problem in my bbq area. Have a great day 🌤 👍

      @@TheFlatTopKing great choice. I tend to use smoked and sweet mostly. Occasionally the hot. I also find myself using sweet when in using paprika more as a food coloring. The red can really lift the look of the dish like yours did. Again , well done.

    Well me personally I kind of like the camshaft cuz you pull the grease towards you like you do on the pit boss so in a commercial application you're pulling it to you easier to keep it clean and all that but what it boils down to is sad to say who's your best corporate sponsors and most of all what is the most that you believe in cuz my flat top I made it out of a piece of cast iron and a couple pieces of flat steel so and I don't know I would trade it for anything so just do what's in your heart

      It's a roast beef sandwich on a kimmelweck roll, a roll covered in caraway seeds and flakey salt and topped with dangerous amounts of horseradish!!! So good bro, and I love mayo on mine, a lot of tes served with a jus for dipping and Gean potato salad is the classic side dish!!

      @@TheFlatTopKing there's recipes out there it's really good on fried chicken or grilled and nando's spicy rice it's south african. The pepper used is a african bird's eye chile very different flavor.. so maybe stir fried rice with the frozen peas and carrots

    Hey FTK…I have a quick question….when I first seasoned my grill I did it to the letter 5x like you said but for some reason the griddle still sticks in the middle….the edges are fine about 2inches out it does not stick at all….so do I have to reseason after each cook or do I need to season the “hot hot” even more

      is it a blacktone...if so i would just turn on and season with no oil...scrape the residue off..typically this is a result of to much oil at once or to much oil after itl cooled down thus making a sticky residue...now that may not be the problem but normally this is an easy fix
      just heat up ti;ll it smokes and burns off the oil...scrape and wipe off.
      I then would cook something that would help like a bunch of sliced onions...cheap and takes a long time to char...cook till its almost burnt using a good high heat oil.. and as always this can be achieved on low...
