I made this cake for my boyfriend's birthday!! It was my first time making cheesecake (he's a cheesecake lover). Everything went smoothly until I added the melted gelatin. The mixture became sort of clumpy and I wanted to give up, but I moved on and whipped + mixed in the cream. The consistency was similar to the video, but just with tiny clumps mixed in. Tip for anyone who wants to make this: make sure the cream cheese is at ROOM temperature & don't add in the gelatin until it is clear, completely liquid, and slightly cooled. Anyway, it still tastes really REALLY yummy even with some tiny clumps, and I can't wait until it's out of the fridge so I can cut a piece for him!
I would recommend mixing the gelatin with the water as soon as those two are added together, to a point where it’s completely smooth and not clumpy. If I remember correctly, leaving gelatin with water by itself without mixing can be quite problematic to deal with, later on. Please take this advice with a grain of salt since I’m no baking expert nor a baker.
