    This Momo recipe is made with soya chunks. This is one of the best soya chunks recipe that you will ever make for yourself and your family.
    This soya momos recipe is made without using any Maida. Therefore it is much healthier than the street style Momos Recipe.
    The flour in this momos recipe is replaced with 3 flours, Semolina flour, Cornstarch and Sabudana flour.
    The filling in this Momos recipe calls for the use of soya chunks and vegetables as well to make it delicious as well as healthy.

    Recipe:
    Soya Momos
    Preparation Time: 30 minutes
    Ingredients: 30 minutes
    Serves: 3-4
    Ingredients:
    For the dough:
    1 cup sabudana
    1 cup cornstarch
    ¼ cup semolina
    ¼ cup cooked beetroot juice/ 2 drops pink colour
    For the filling:
    2 cup soya chunks
    2 Onions
    ½ cup garlic, minced
    2” ginger, minced
    2 Green chilies, minced
    1 tsp Sugar
    Salt to taste
    1 tbsp Soya sauce
    1 tbsp Vinegar
    1 tsp Pepper powder
    2 tbsp vegetable oil
    ½ cup corn
    ¼ cup chopped carrots
    ¼ cup chopped beans
    2 tbsp coriander, leaves
    2 tbsp chopped coriander stems
    For momo chutney:
    10 Whole Kashmiri red chillies
    2 Tomatoes
    ¼ cup Garlic
    1 tsp sugar
    Salt to taste
    Method:
    Lightly roast the sabudana for 4-5 minutes over low heat.
    Cool slightly and grind to a fine powder. Sift the powder to remove any coarse powder.
    Grind the semolina to make a fine powder.
    Mix the 3 flours well, add ½ tsp salt. Divide the flours into 2 equal parts.
    To one part add boiling hot water a little at a time and mix well with a spoon till it comes together like a dough. Cover and rest for 20 minutes.
    To the second part, add 2 tbsp beet root juice or 2 drops pink colour, add boiling hot water a little at a time and mix well with a spoon till it comes together like a dough. Cover and rest for 20 minutes.
    For the stuffing:
    Boil 2 cup water with 1 tsp salt, ½ tsp salt, 1 tsp soya sauce, 1 tsp vinegar, 2 tbsp chopped ginger, 2 tbsp chopped garlic, and the soya chunks. Boil for 7-8 minutes or till the water almost evaporates.
    Drain and cool completely. Grind to a coarse mixture.
    Heat 2 tbsp oil in a pan. Add the chopped garlic and sauté till golden.
    At the minced onions and sauteed till golden. Add the minced carrots, beans and mix well. Add the crushed soya chunks. Salt to taste. Pepper powder. Soya sauce, vinegar and mix well. Add chopped coriander stems and mix well. Remove from heat. And at the coriander leaves. Cool completely. Before filling in the momos.
    knead the dough again for 2 minutes till soft and pliable. Divide the dough into
    Marble sized balls and roll out each ball into a thin Puri.
    Place one tablespoon stuffing in the centre of the Puri. Now pinch the size of the puris as you would for Modak. Pinch together to adjacent sides. To make a flower shape. Prepare all momos like this. Place one corn kernel in the centre of the Momo. Place the prepared momos in a grease steamer and steam for 15 to 16 minutes till done. Serve immediately.
    To prepare the momos chutney. Soak 10 Kashmiri red chillies and hot water for half an hour. Grind the Kashmiri chillies. With 2 medium sized tomatoes and. Quarter cup of the soaking water to make a coarse paste.
    Heat 2 tablespoons oil in a pan. Add quarter cup minced garlic and saute till golden. Add the tomato chilli paste. What is spoons? Salt. One teaspoon sugar. And cook. Till the mixture is thick and syrupy. Finally, add one tablespoon white vinegar, mix well and remove from heat. Serve with the prepared momos.
