All kaya are made from coconut. Hainanese kaya is brown. Nonya kaya is green. Brown from caramlised sugar. Green from pandan. So i don't know what coconut kaya they are referring to.
Saying coconut kaya is like saying chai tea 😂 Kaya is basically coconut jam so coconut kaya is coconut coconut jam. Just like chai means tea so chai tea is tea tea 😂
The “lumpy” kaya from Chin Mei Chin is the legit hand made kaya just like how my grandma used to make it over a water bath. Those kaya out there are all machine made these days, so grandma wins hands down 😂
I think what they meant by coconut kaya is the hainanese style kaya. The orange color comes from caramel you mix in at the end of the cooking. While the pandan style does not have caramel + added pandan coloring made it so much greener. Both are coconut milk based, so coconut kaya is very ambiguous term
Ehhh... Kaya is Coconut + Egg + Sugar. The yellow/orange one is the original one. The color sort of depends of what type of eggs is use. The Yellow Yoke and Orange / Red Yoke will affect the color of the final product. The Green one is add Pandan to it. The Brown one is Gula Melaka added to it but the Gula Melaka can be too dark, if you can get your hands on Corn Syrup. The Brown will not be too intense.

If you do it at home, the basic ingredients are only pandan leaves (blended in or just cook with), coconut milk, sugar, eggs some with a bit of butter.

Lumpy kaya is like over-cooked kaya or quick-cooking/direct fire way hence the lumpy eggs and texture. This is in comparison of the slow and low fire over water bath method, which takes hours for the traditional smooth kaya.
we need a episode on how to cook the perfect eggs. All the other videos are not as nice. the kopitiam eggs the egg whites are so beautiful and wraps around the yolk in a translucent glaze. how to do without having a souvide machine?
