      The "Free World" claimed apartheid in South Africa was freedom. Taiwan was invaded by a murderous dictator who lost the Chinese Civil War; he claimed being a murderous dictator was freedom.

    In the first edition it says 2 1/2 CUPS of water for the broth, not 10 cups! I believe it's a typo, it's supposed to be 2/12 quarts!!!!!!!

    An interesting alternative way of making the beef noodle soup in the States! A bit different though but hope it tasted as good as the Taiwanese one! 🤔😋🤨

      It does work surprisingly well! My pre-teen daughter spent a month in TaiPei a few summers ago, studying Chinese and eating beef noodle soup. She had been hoping to find a restaurant offering something like what she remembered, back in the states, and even though our home town is well represented by TaiWanese restaurants, she didn't find a satisfying answer until I made this version at home. (Having said this, I also use an Instant Pot to make the beef stock, to increase the beefy goodness extraction into the broth.)
