I am a huge fan of ATK and their style- however, milk street is defiantly my new favorite, the recipes in milk street seem more adventurous, more ethnic and the cast seems to be more diverse and bring an authentic experience. I’m really glad Chris created this, I still like ATK, but Milk street challenges ATK that they aren’t always at the top of their game with creativity. Milk street raises the bar. I expect Milk street to evolve more in ways that ATK isn’t.
I would like to see the recipe have no sugar. Sugar is very processed and artificial. It seems sneaky to add a little of it to everything. There are healthier ingredients that can add some sweetness. What did people do before sugar became available? They probably had better teeth.

Totally agree, MS is a bit more cutting edge than ATK (but love both). Although I hear Chris left ATK under a cloud.

Mm, sweet is a basic flavor, like salt and sour. Adding a little to get the desired balance of flavors seems okay to me.
China has been producing sugar from cane for thousands of years....
