Cornbread Waffle with Sweet and Spicy Pork

Try this recipe out. It is a great way to use all that delicious pulled pork. A cornbread waffle with cheddar cheese and green onion, piled high with pulled pork and a maple and horseradish syrup. Sweet, spicy, savory, salty... what more could you want? How about seconds? Recipe below.
What you will need:
2 - 3 cups of Huff Daddy's Pulled Pork - 2 - 3 cups (see my video on How to Smoke a Pork Butt - • HuffDaddy BBQ Tutorial... )
1 box (8.5oz) of Jiffy Cornbread Mix
1 egg
1/3 cup buttermilk (plus a little more)
1 cup shredded sharp cheddar cheese (plus extra for top)
About 4 green onions - chopped (the dark green and most of the white)
1 cup of maple syrup - Grade A amber if possible
2 tablespoons of prepared horseradish
Mix the cornbread mix according to the instructions on the box using the egg and the buttermilk. Add a little more buttermilk to get the right consistency of a pancake or waffle mix.
Once well mixed, add the cheddar cheese and green onion and mix, saving a little of each for garnsih later.
Heat your waffle maker, make sure it is sprayed well with non-stick spray and pour the mix into the waffle maker.
While the waffles are cooking, mix the syrup and horseradish in a bowl. Add more horseradish to taste if you like a little spicier.
When the waffles are ready, move to a plate, top with pulled pork, drizzle with the syrup and top with a little more cheddar cheese and green onions.
Makes enough for 2 - 4 waffles depending on the size of your waffle maker.
