Mamaliga - Romanian Polenta

  • Mamaliga is a popular traditional Romanian dish which is like a polenta. Best reed with cottage cheese and sour cream. Can also cut up leftover Mamaliga and sauté in olive oil
    Mamaliga - Serving for 4
    4 cups water
    1.5 cups corn meal
    Salt to taste
    1-2 tablespoons butter
    A few drops of olive oil

    My God...I'm not crazy after all! I'm 77 now, and while taking a stroll down memory lane recently after a couple beers, I remembered my Dad using the wooden rolling pin to flatten out the mamaliga on a wooden cutting board. I loved it soo much. (His parents were from Romania too). I didn't bother pursuing it for years because I was positive absolutely NO ONE would ever even know what the hell 'mamaliga' was...and then Mr. Google came along and I said, 'what have I got to loose?' Thank you so much for sharing...it was just as I remembered, but I almost lost it when you started singing, 'Tradition'...it was like I could hear my Mom again. Bless you. I'd look into sweet lokshen kugel next, but that sounds like too muck work! lol.

    I made this and ficatei de pui for my Romanian wife. She said it was just like home. I also used a stick! My arms thank you 😊

    My grandparents immigrated from Romania and my dad used the stick when making it too! Our family makes it thicker and we slice it horizontally w string to add layers of farmers cheese. Really good w Romanian chicken stew!

      is the same ,but different way of cooking ,some like it more watery some more thicker

    If your gonna eat mamaliga use brinza and smintina because it makes it more flavor full and soft

    mamaliga muh! i usually add kashkaval sheep cheese or feta or bacon to mine. i dont like fine ground cornmeal. i like it coarse, it has better texture like grits.

    Whay olive oil? The traditional mamaliga is not with olive oil

    Dear Trespasser - thank you for your detailed explanation. Your grandma’s Mamaliga sounds amazing and you must have wonderful childhood memories. Perhaps you can post a video making her recipe using her techniques.

      OK, I deleted the comment because it sounded too much like a criticism, but in fact I realize the method depends on what type of cornmeal you have. What I find in Canada is the quick cooking type and it's made much like you are doing it. But I thought in Romania one can still find stone ground whole cornmeal (the kind you sift to get the exact coarseness) - that would require a more laborious process to get the creamiest yet very thick consistency while properly cooked - not an easy feat to achieve.

    Now add some white cheese with sour cream or Smientana(Smantana) some sausages, and fri3d eggs. Enjoy

      Of course maize wasn't available, but before that, a similar dish was made from different, indigenous grains.
