That's a really big bag of chips. You would have to be extremely moderate in your consumption of those chips for it not to be detrimental healthwise. Most people will be pigging out on those chips. You are still eating a sliced potato that has been drenched in oil and covered in salt. Doesn't matter if it's canola or peanut or olive or avocado or whatever else. You can lead a healthy life and eat "bad" foods, but it doesn't help the conversation when you arbitrarily give something the healthy or unhealthy label.
Not really, assuming the label is truthful and that's a pretty big assumption but let's go with it. It's the difference between poisoning your self with toxic ingredients and eating food that is made with things that are much more compatible with human biology. Even a little poison is still poison. If you think you are leading a healthy lifestyle but are still eating unnatural and highly processed crap because you don't eat a ton of of it, your fooling yourself and probably just addicted. Additionally you may even think you feel good but as soon as you cut out these things you finally realize what feeling good actually means. Also you can eat pretty much as much salt as you like and be healthy af. Same with avocado oil or any other type of naturally occurring plant oil or animal fat.
I've found a great food product that I've never heard of and it's a superfood, it has Hazelnuts, Milk, Coco, Vanilla and taste delicious, it's called Nutella, try it, it's changed my life.

Your best bet as a diabetic is to opt for low glycemic sweeteners like maple syrup or coconut sugar.
