35 years in the trades of Chicago, I have never seen a cooperative team of workers like yours. Up here the clowns would tell you to pound sand. As far as abandon materials, they would Rob you blind. Nothing would make it back to you for resale. I enjoy these videos.
They would do it here we attract a certain worker, a- holes don't last a day or two with us.....we go through a lot of guys to get the guys that will work and follow our rules.

The second job, why would they want to keep the steel framing but get rid of the drywall? 🤔
The steel framing is typically used in commercial projects. There's a lot of good reasons to use it. It tends to be straighter. It's lighter to carry up. And it's easier to work within a lot of ways and no. Termites eat it.

How quick is the process from getting the job to starting demo? Weeks/months? If there's enough time could it be worthwhile to try to sell good (pricey) items on Marketplace that you don't have space to store?
3 days to a week for the average demo and no selling from the site would not work most of these places are high end gated communities. We do sell on marketplace. Its not ideal we are looking for a place right now.
I realise your making a video here but, you seem so patronising when you speak to the fellas who are dismantling the interiors.
