FYI @5:41 If you're deleting the entire object after inverting the selection when you choose 'Delete' 'Vertices' - simply choose 'Delete' 'Edges' instead, you're welcome!

At 7:20,you could have selected all the faces and pressed I(Inset) to make a loop cut. That is If you want a perfect inner circle.
