The reason why Shirou turned brown and his hair turned white is because of too much use of his projection magecraft, and Archer had not died a few episodes ago he was just hurt really badly, pretended to die by going into spirit form, and stayed that way until the final battle to save mana if not he would have died.

The song you heard that you mentioned was from the "old Anime" is actually the original opening to the visual novel 😂 there was also an instrumental version. When the anime came out it redid the song. So ubw having that song is just a reference to the vn not the original anime you saw

Despite what Gil says he still isn’t going all out, I highly recommend you watch Fate Strange Fake, its first episode is out and shows Gil acting far more serious when playing with his best friend. Also Fate Babylonia if you want to see Gil finally being on the protagonist side, although it takes a while for him to actually do much.
