Undyne is the most epic character in Undertale. She cheated death to save the entire underground from Frisk and even when she was defeated AGAIN, she went out like a knight. What a hero.
Also, her speeches and quotes are awesome-
And don't forget how cool her boss theme is-
Both of them, Spear of Justice and Battle Against a True Hero. The second one is probably my favorite song from the entire Undertale OST-

[MX]:Ahora que lo pienso los demonios de KnY son casi pan comido para los magos y Monstruos de Glitchtale, por el simple hecho de que pueden usar la magia para dañar el alma de otros, y por mucha regeneración que tenga los demonios sus almas quedarían destrozadas.
[US]: Now that I think about it, KnY demons are almost a piece of cake for Glitchtale wizards and Monsters, for the simple fact that they can use magic to damage the souls of others, and no matter how much regeneration the demons have, their souls would be destroyed.
