I would like to use a thinner white birch if that would work. I would like a kitchen pull out in the back and a 60" x 26" bed frame. Your buildouts look great!
My recommendation is look for a full size chevy. The fuel mileage on my 2008 is around 20 miles to the gallon. I love chevy mini van but the 4.3 doesn't get good mileage. The full size has 4.8 for the smallest. Always wanted a astro 4x4 i had a s10 blazer 4x4 when i was in the service. Drove it all over America even Moab. As a old guy that has survived being a dumbass a van is a great investment you can travel even live in it. Its a safety net especially when living paycheck to paycheck. Travel while your young enjoy life you only get one shot. The only thing you'll regret is thing you didn't do. Don't have any regrets.
