    I’m so glad you rewarded Whiskey for his patiences! Watching this video l realized, haven’t made Steak au Poivre since my Husband passed away. That was his all time favorite meal. I always added Madagascar Green Peppercorns, it’s definitely not “optional” as far as I’m concerned. I use to snack on them straight from the can. ♥️👍🏼👏🏼👏🏼👏🏼

    Just made this recipe and it was simple and delicious. Paired it with Asian stir fried veggies. Better than ordering it from a restaurant. The steak was juicy and the sauce was very tasty. Thanks Chef Joel for this wonderful recipe.

    My best friend (an excellent cook) made steak for me last night (med rare w/balsamic mushroom sauce). He also reminded me that, a few years ago, I promised to make him steak au poivre. He’s still waiting. Of course yours was the first recipe I looked at.

    This has become my new favorite channel. I love your style and simplicity - less is more truly. I can't be bothered listening to people talk incessantly just for a basic idea for something different. It's not that I can't cook, I surely can but sometimes something different is wonderful. A recipe longer than 5 mins is a waste of bandwidth. Well down Chef Joel!

      Made this on Friday night for our dinner & it was superb! Purchased some prime tenderloin fillets from Costco. Why pay premium prices at a restaurant when you can make it just as well at home? Whiskey would have been proud! lol

    That looks delicious, Joel. Your techniques could be applied to so many recipes. That sauce would work for so many dishes. You got that one so right!
    I don't know what category to put this video in as it could be used in so many ways!

    Wow! This is so easy and decadent. I paired with Caeser salad and home fries. I did baste the filet mignon in butter and thyme after turning and added minced shallots and garlic to the pan sauce. This is wonderful.

    Love all the new videos I saw in the email this week! I saved almost all of them, including this one. You might think about adding amazon links to the unique and unusual ingredients you use sometimes. Like those green peppercorns. I dont keep those on hand, never even used them. But now, since I have seen this recipe, have a great need to make it and have absolutely no problem supporting what you do, I would much rather purchase them via a link from you than just randomly on Amazon or some other webpage. :) Hint Hint. Thanks again chef, for so many great new recipe ideas!

Also, if I want to spend my money on Amazon I would rather do it supporting someone whose recipes and content are actually meaningful and useful to me. I pay for cable and watch cooking shows on those channels where those people get filthy rich. And yes I may have made some of their recipes. But I couldn't tell you how many of Chef Joel recipes from recipe30 I have actually used. It's been quite a bit. My family loves them all. I'd rather support him and other quality RUclipsrs instead of people like Ree Drummond the pioneer woman and Guy Fieri. They are filthy rich. I'm getting richer so what's the difference? And one last thing, I'm pretty sure you have no idea how much money he has or makes, and it's really none of your business.

    Wonderfully demonstrated with delicious results! When I season the filets I like to use brined green peppercorns because I think that they add a nice fruity flavor as well as the desired heat. They are also easier to apply to the steak. I also like to use Demi Glace as opposed to cream (although your use of cream is excellent).

    Nice ! I know it says that green pepercorns are optional but in my opinion it is a must.
    I am from France, instead of brandy we use cognac and we don't use mustard but shallots.
    But I am sure this sauce is still delicious.

    MERCI pour le partage. C'est un steak aux 2 poivres. En effet, le steak au poivre est flambé au cognac, déglacé au vin blanc ou porto, ensuite le bouillon, crème et beurre et tout le tralala !     Joel my good Aussie friend, Whiskey had his nose & ears up when he smelled that meat, you are a good man giving him that chunk of meat, I think I'll make roasted asparagus spears brushed with a combo of butter/evoo & Lawry's brand garlic saltsprinkled on( Lawry's is only brand I use) & some fried potatoes( patatatas in italy) brava, will be delicious, cheers mate !

    I have one word Joel………..STUNNING!……ok I have a few more words 😉 haha This is exactly how I cook my eye fillets, same techniques served with the same sauce (sometimes I change to mushroom sauce) but exactly the same way. The only thing I haven’t done is flambé, which watching you in this video has given me new confidence, so why not next time. And I always cut my own steaks, never under 2 1/2 inch thick.       Just use chicken or beef stock, it will be different but still amazing. 👍
