This demo is merely for simple piecewise functions, like seen in a precalculus course. As far as interrupted time series plots, I am not familiar with that. Sorry.
There could be a few reasons why. One is that you accidently highlighted a point on a different branch. Another could be that in the selecting of the second set of points, the choice new points (instead of new series) is selected. If they are the same color, this could be a reason. I would have to see the data set and give it a try myself to try to duplicate and diagnose.
In my experiment when I followed your directions, I got a graph that was connected at the break points which is not correct when graphing piecewise functions. The way I describe here avoids connecting those values. Hope this helps and sorry for the long delay in my response.
This is not a good solution to this problem. This would make a spreadsheet extremely fragile (ie easy to break). There are many ways to plot piecewise functions in a spreadsheet. The more standard way of using nested IF's or multiple columns are far superior solutions.

Why not just highlight all the cells at once (A2:B18) and chart the whole thing in one step?
