Green Goddess Dressing [Dairy Free]

  • Okay, so this isn't a traditional green goddess dressing. Typically, green goddess is made with mayonnaise, sour cream or greek yogurt with the addition of herbs and often anchovies.
    We love that version, but this take (by Ottolenghi) is dairy free, which means it's a go-to for Dak. All that aside, it's fricken delicious. You can find the original version in his book, Simple, but we only adjusted it slightly. We ended up adding a bit more salt, lemon juice and olive oil to further smooth it out and add extra tang. Constantly chasing the tang.
    Ottolenghi calls this his "fridge-raid dressing," but that didn't feel authentic to us because, well, we never have this many fresh herbs on hand. The day we casually have 5 different herbs in our fridge for no apparent reason, we will quit our day jobs. Therefore, we likened this to a green goddess dressing.
    Though there are seemingly a lot of ingredients, you can roughly chop all of them and throw them into a food processor, making it relatively simple. If you don't have a food processor, you could try a blender. Dak originally said you could also baby bird it, but we cut that out in the editing process...for obvious reasons.
    The ginger and green chile add a surprising complexity: the kind where, unless you're a self-proclaimed super taster (like Dak's girlfriend), you might notice it but not entirely recognize it.
    We highly recommend making a batch of this and tossing it into salads all week. And never underestimate the power of a sprinkle of flake salt for finishing.
