In this episode I'm talking about the basics of the V-Carve operation in the FreeCAD Path workbench.
It is very useful when you want to write text with your CNC using a TrueType Font.
You can also use it to carve different shapes, as long as you take care for some tricks preparing the object to be carved.

How does FreeCAD compare to paid for CAM software? I have FreeCAD experience but not got a CNC yet.

I've only used freecad. It has a few issues, but after getting used to it and learning a few tricks, I can say that I would safely be able to use freecad in a production environment, at least in the category that I'm using my cnc, which is woodworking.
